Abstract

Salah satu bagian dari kopi yakni kulit biji kopi
atau biasa disebut cascara dimanfaatkan dan diolah sebagai salah satu minuman herbal yang bermanfaat bagi beberapa penyakit kronis, yaitu penghambat pertumbuhan sel kanker, menurunkan kadar gula darah, merawat kesehatan jantung dan lainnya. Dengan khasiat yang dimiliki cascara diproduksi menjadi teh herbal. Guna tetap menjaga kandungan pada cascara agar tetap terjaga
dan tidak berubah serta mempersingkat waktu pengeringannya maka dibuatlah sistem gabungan heat pump dryer dan swirling fluidized bed. Teknologi heat pump dryer sendiri berfungsi sebagai udara untuk pengeringan cascara dengan tetap menjaga temperatur dan kelembapan udara pengeringan dan swirling fluidized
bed untuk mempercepat laju pengeringan.
Penelitian dilakukan dengan cara mengeringan
cascara dengan metode gabungan heat pump dryer dan swirling fluidized bed. Pengeringan dilakukan dengan menyiapkan cascara basah sebanyak 250 gram dengan kecepatan poros blower sebesar 10 m/s, 7 m/s dan 4 m/s serta sudut blade blower sebesar 10. Kemudian cascara dimasukkan ke dalam swirling fluidized bed dan terjadilah proses pengeringan. Pengumpulan data dilakukan tiap 10 menit hingga mencapai kadar air sebesar ≤8%. Data-data yang dicatat adalah Temperatur dan Relative Humidity
pada 5 titik (lingkungan, evaporator, kondensor, depan blower dan sfb) serta mencatat arus dan voltase pada heater, blower dan kompresor. Hasil yang diperoleh dari penelitian ini dianalisa
laju perpindahan massa dan laju pengeringannya. Ketiga variasi kecepatan yang digunakan adalah 10 m/s, 7m/s dan 4 m/s. Kecepatan 10 m/s menghasilkan nilai yang paling baik yaitu kelembaban relative sebesar 30 %, kadar air cascara sebesar 0%, pengurangan massa air
pada kandungan cascara sebesar 50 gram, drying rate sebesar 2,24%/menit dan koefisien perpindahan massa sebesar 0,0011 m/s.

One part of coffee, namely coffee bean skin or
commonly called cascara, is used and processed as an
herbal drink that is beneficial for several chronic
diseases, namely inhibiting cancer cell growth, lowering
blood sugar levels, treating heart health and others. With
the properties that cascara has, it is made into herbal
teas. In order to keep the content of the cascara intact
and not change and shorten the drying time, a combined
system of heat pump dryer and swirling fluidized bed was
made. The heat pump dryer technology itself functions as
air for drying the cascara while maintaining the
temperature and humidity of the drying air and swirling
fluidized bed to accelerate the drying rate.
The research was conducted by drying the
cascara using a combined method of heat pump dryer
and swirling fluidized bed. Drying is done by preparing
250 grams of wet cascara with a blower shaft speed of 10
m/s, 7 m/s and 4 m/s and a blower blade angle of 10.
Then the cascara is put into a swirling fluidized bed and
the drying process occurs. Data was collected every 10
minutes until it reached a moisture content of ≤8%. The

data recorded are Temperature and Relative Humidity at
5 points (environment, evaporator, condenser, front
blower and SFB) as well as recording the current and
voltage on the heater, blower and compressor.
The results obtained from this study analyzed the
mass transfer rate and drying rate. The three speed
variations used are 10 m/s, 7 m/s and 4 m/s. The speed of
10 m/s produces the best value, namely relative humidity
of 30%, cascara moisture content of 0%, reduction of
water mass in cascara content of 50 grams, drying rate of
2.24%/minute and mass transfer coefficient of 0, 0011
m/s.
