Abstract

Menurut Beverage Institute Indonesia, kalori yang terkandung pada sukrosa termasuk tinggi sehingga memicu berbagai penyakit. Oleh karena itu, diperlukan adanya subtitusi pemanis rendah kalori seperti sorbitol. Industri sorbitol dinilai strategis karena sorbitol banyak dimanfaatkan di berbagai industri. Pasar sorbitol global diproyeksikan mencapai USD 1.928,3 juta pada tahun 2026 dengan CAGR 5,54% pada forecast period 2019 – 2026. Menurut IHS Market, pertumbuhan konsumsi sorbitol di Indonesia tahun 2016 – 2021 meningkat lebih dari 3% per tahun. Pati sagu dipilih sebagai bahan baku utama proses produksi sorbitol karena memiliki kandungan pati yang tinggi. Pembuatan sorbitol dari bahan baku pati melalui dua tahap proses utama yaitu proses perubahan strach menjadi glukosa melalui hidrolisa enzim dan proses pengubahan glukosa menjadi sorbitol menggunakan proses hidrogenasi katalitik. Proses pembuatan sorbitol dengan hidrogenasi katalitik dilakukan dengan mereaksikan larutan dekstrose dan gas hidrogen bertekanan tinggi dengan menambahkan katalis nikel dalam reaktor (reaktor hidrogenasi). Proses hidrogenasi katalitik mempu menghasilkan yield sebesar 95–99%, dengan waktu yang relatif cepat dan harga terjangkau. Pabrik sorbitol ini direncakan akan didirikan di Kawasan Industri Pelintung, Pelintung, Medang Kampai, Kota Dumai, Riau, Indonesia. Pabrik direncanakan mulai dibangun pada tahun 2022 dan mulai beroperasi pada tahun 2024. Investasi pembangunan pabrik terbagi dari modal sendiri dengan laju inflasi 1,55% per tahun sebesar Rp125.781.902.612,00 dan modal pinjaman dengan suku bunga 8,00% per tahun sebesar Rp322.121.197.711,00. Total biaya produksi sorbitol sebesar Rp397.372.970.430,00 per tahun. Hasil penjualan sorbitol 70% sebesar Rp328.824.427916,00. Internal rate of return dari pabrik ini adalah 14,74% dengan payout time 5,22 tahun dan break event poin sebesar 16,10%. Pabrik ini direncakan beroperasi secara kontinu 24 jam selama 330 hari pertahun operasi dengan rencana kapasitas produksi sebesar 83 ton/hari dengan jumlah foreman proses dan produksi sebanyak 42 orang/hari. Pabrik ini diharapkan dapat mengembangan kawasan industri yang ada di provinsi Riau. ================================================================================================= According to the Beverage Institute Indonesia, the calories contained in sucrose are high, causing various diseases. Therefore, it is necessary to substitute low-calorie sweeteners such as sorbitol. The sorbitol industry is considered strategic because sorbitol is widely used in various industries. The global sorbitol market is projected to reach USD 1,928.3 million in 2026 with a CAGR of 5.54% in the forecast period 2019-2026. According to IHS Market, the growth of sorbitol consumption in Indonesia in 2016-2021 will increase by more than 3% per year. Sago starch was chosen as the main raw material for the sorbitol production process because it has a high starch content. The manufacture of sorbitol from starch raw materials goes through two main process stages, namely the process of converting starch into glucose through enzyme hydrolysis and the process of converting glucose into sorbitol using a catalytic hydrogenation process. The process of making sorbitol by catalytic hydrogenation is carried out by reacting a solution of dextrose and high-pressure hydrogen gas by adding a nickel catalyst in the reactor (hydrogenation reactor). The catalytic hydrogenation process is able to produce a yield of 95–99%, with a relatively fast time and affordable price. The sorbitol factory is planned to be established in the Pelintung Industrial Estate, Pelintung, Medang Kampai, Dumai City, Riau, Indonesia. The factory is planned to start construction in 2022 and start operating in 2024. Investment in factory construction is divided into own capital with an inflation rate of 1.55% per year of IDR 125,781,902,612.00 and loan capital with an interest rate of 8.00% per year. amounting to Rp.322.121.197.711.00. The total production cost of sorbitol is IDR 397,372,970,430.00 per year. The sales of 70% sorbitol amounted to Rp328,824,427916,00. The internal rate of return from this factory is 14.74% with a payout time of 5.22 years and a break event point of 16.10%. This factory is planned to operate continuously 24 hours for 330 days per year of operation with a planned production capacity of 83 tons/day with a number of processes and production foreman of 42 people/day. This factory is expected to develop industrial areas in Riau province.
