Abstract

Kulit ikan patin merupakan produk samping olahan ikan yang berpotensi sebagai bahan baku pembuatan gelatin halal. Namun, gelatin kulit ikan patin (GKIP) memiliki tekstur lembek pada suhu ruang. Hal tersebut, dapat diatasi dengan modifikasi transglutaminase (TG). Penelitian GKIP yang dimodifikasi TG (GKIP_TG) perlu diuji keamanan dan penerimaan konsumen sebelum dipasarkan. Penelitian ini bertujuan untuk menentukan tingkat toksisitas akut GKIP_TG terhadap mencit (Mus musculus) dan mengetahui mutu organoleptik GKIP_TG. Preparasi gelatin diperoleh dari ekstraksi asam basa pada suhu sekitar 580C, pembuatan film gelatin mengadopsi metode Yi (2006). Uji toksisitas dilakukan terhadap mencit menggunakan metode Limit Test Procedure dari Organisation for Economic Cooperation and Development (OECD) dan dianalisis secara deskriptif kualitatif sedangkan uji organoleptik dilakukan secara deskriptif menggunakan penilaian hedonik dan analisis statistik Friedman Test. Pemberian GKIP_TG tidak menimbulkan efek toksik dan kematian. Film GKIP_TG 10 mg merupakan kelompok perlakuan yang lebih disukai oleh panelis dengan rata-rata tingkat nilai kesukaan sebesar (4,9-6,5 8) dibandingkan film GKIP_TG 10 mg (3,8-6,0) dan film GKIP_TG 50 mg (4,1-6,3).

Striped catfish skin is a side product of processed fish that has the potential as a raw material for making halal gelatin. However, striped catfish skin gelatin (GKIP) has a mushy texture at room temperature. This can be overcome by the transglutaminase (TG) modification. The research about TG modified into GKIP (GKIP_TG) needs to be tested for safety and consumer acceptance before being marketed. This study aims to determine the level of acute toxicity of GKIP_TG on mice (Mus musculus) and to determine the organoleptic quality of GKIP_TG. Gelatin preparation was obtained from acid-base extraction at a temperature of about 580C, gelatin film making refers to the Yi (2006) method with modifications. Toxicity tests were carried out on mice using the Limit Test Procedure method of the Organization for Economic Cooperation and Development (OECD) and analyzed descriptively qualitatively, while organoleptic tests were carried out descriptively using hedonic assessment and statistical analysis of the Friedman Test. Giving GKIP_TG did not cause toxic effects and death. GKIP_TG 10 mg film was the preferred treatment group by the panelists with an average level of preference value of (4.9-6.5 8) compared to GKIP_TG 0 mg (3.8-6.0) and GKIP_TG 50 mg film (4.1-6.3).
