Abstract

Risiko rantai pasok dapat didefinisikan sebagai kejadian tak terduga yang dapat mengganggu kelancaran aliran material. Risiko rantai pasok berpeluang besar terjadi pada produk frozen food dan menjadi tantangan utama dalam memastikan keamanan dan kualitasnya. Frozen food dapat terkontaminasi selama penerimaan pasokan, penanganan dan penyimpanan, proses produksi, dan distribusi. Maka, diperlukan kolaborasi pemangku kepentingan yang berbeda untuk menerapkan tindakan yang efektif untuk mencegah limbah makanan yang berasal dari adanya peran dan tanggungjawab yang berbeda. Penelitian ini berfokus kepada salah satu perushaaan di PT X yang memproduksi produk frozen food di Indonesia. Permasalahan yang terjadi pada perusahaan ini adalah lemahnya tanggungjawab aktor yang berperan dalam rantai pasok sehingga terjadi beberapa complaint di perusahaan X yang menjadi penyeabab faktor risiko rantai pasok. Penelitian ini bertujuan untuk mengidentifikasi risiko-risiko dengan metode ANP (Analytical Network Process), melakukan pengendalian risiko dengan integrasi metode WFMEA (Weighted Failure Mode Effect Analysis), serta strategi mitigasi dengan metode MACTOR (Matrix of Alliances and Conflicts: Tactics, Objectives and Recommendations) di PT X. Terdapat 3 kriteria utama dan 13 subkriteria penyebab risiko rantai pasok yang telah disepakati perusahaan. Hasil penelitian dengan WFMEA diperoleh bahwa prioritas tertinggi yaitu risiko penanganan dan penyimpanan dengan nilai WRPN sebesar 196.3. Dan berdasarkan FMEA subkriteria tertinggi dalam kriteria penanganan dan penyimpanan adalah alur penanganan dan penyimpanan yang berbeda dengan SOP. Sehingga strategi mitigasi dilakukan berdasarkan adanya risiko kontaminasi peralatan, lemahnya komunikasi dan kemampuan teknik, dan kecerobohan menjaga kebersihan.

Supply chain risk can be defined as unforeseen events that can disrupt the smooth flow of materials. Supply chain risk has a high chance of happening to frozen food products and it is a major challenge in ensuring safety and quality. Frozen food can become contaminated during receiving, handling and storage, production, and distribution. Thus, collaboration of different stakeholders is needed to implement effective measures to prevent food waste stemming from different roles and responsibilities. This research focuses on X company which produces frozen food products in Indonesia. The problem that occurs in this company is the weak responsibility of actors who play a role in the supply chain so that there are several complaints in X company which are the cause of supply chain risk factors. This study aims to identify risks using the ANP (Analytical Network Process) method, carry out risk control by integrating the WFMEA (Weighted Failure Mode Effect Analysis) method, as well as mitigation strategies using the MACTOR (Matrix of Alliances and Conflicts: Tactics, Objectives and Recommendations) method) in X company. There are 3 main criteria and 13 sub-criteria that cause supply chain risk that have been agreed by the company. The results of the study with WFMEA obtained that the highest priority is the risk of handling and storage with a WRPN value of 196.3. And based on the FMEA the highest sub-criteria in the handling and storage criteria is the handling and storage flow that is different from the SOP. So that the mitigation strategy is carried out based on the risk of equipment contamination, weak communication and technical skills, and carelessness in maintaining cleanliness.
