Abstract

Metode cepat untuk membedakan daging sapi bali dan babi yorkshire telah dilakukan menggunakan spektrofotometer fluoresens. Sampel dilarutkan menggunakan aqua DM kemudian diukur fluoresensinya. Waktu yang dibutuhkan untuk pengukuran yaitu 2 menit 24 detik. Hasil penelitian menunjukkan bahwa spektrum fluoresens antara daging Sapi Bali dan Babi Yorkshire dapat dibedakan. Daging Sapi Bali memiliki puncak emisi pada λmax 300 nm dan 604,5 nm serta puncak eksitasi pada λmax 300 nm dan 1 puncak dengan intensitas rendah di sebelah kanan spektrum. Daging Babi Yorkshire memiliki puncak emisi pada λmax 309 nm dan 621 nm serta puncak eksitasi pada λmax 311 nm. Sedangkan untuk daging campuran antara Sapi Bali dan Babi Yorkshire memiliki 1 puncak eksitasi dengan intensitas yang out of range serta 2 puncak emisi, yaitu puncak pertama dengan intensitas yang out of range dan puncak kedua pada λmax 687,5 nm. Spektrum daging campuran ini lebih mengarah pada spektrum daging babi. ================= Rapid method to distinguish meat of Balinese cow and yorkshire pig has been investigated using fluorescence spectrophotometer. Sample was dissolved in demineralized water and then measured its fluorescence. Time required for measurement is 2 minutes 24 seconds. The results showed that the fluorescence spectrum between meat of Balinese Cow and Yorkshire Pig can be distinguished. Meat of Balinese Cow has an emission peak at λmax = 300 nm and 604,5 nm; excitation peak at λmax = 300 nm and 1 peak with low intensity in the right of spectrum. Meat of Yorkshire Pig has emission peak at λmax = 309 nm and 621 nm and excitation peak at λmax = 311 nm. Whereas for mixed meat between Balinese Cow and Yorkshire Pig has 1 excitation peak which its intensity is out of range and 2 emission peaks,i.e., the first peak with out of range intensity and second peak at λmax = 687,5 nm. The mixed meat spectrum is resemble with pig meat’s spectum.
