Abstract

Penelitian mengenai metode cepat untuk membedakan daging sapi Brahman dan babi Yorkshire telah dilakukan menggunakan spektrofotometer fluoresens. Sampel daging yang mengandung darah diekstrak menggunakan aqua DM. Hasil menunjukkan bahwa spektrum fluoresens antara sapi Brahman dan babi Yorkshire memiliki perbedaan panjang gelombang puncak spektrum fluoresens. Sapi Brahman memiliki puncak emisi pertama di panjang gelombang 340 nm dan emisi kedua 684 nm serta puncak eksitasi di panjang gelombang 342 nm. Sedangkan babi Yorkshire memiliki puncak emisi pertama di panjang gelombang 310 nm dan emisi kedua 621 nm serta puncak eksitasi di panjang gelombang 311 nm. Daging campuran ditandai dengan nilai intensitas emisi pertama dan eksitasi keluar dari range intensitas. Daging campuran dengan perbandingan babi 95% merupakan batas deteksi terkecil yang dapat dideteksi spektrofotometer fluoresen. Dalam satu kali pengukuran sampel dibutuhkan waktu 2 menit 36 detik. Berdasarkan hasil yang diperoleh, metode fluoresensi dapat mendeteksi perbedaan antara sapi Brahman dan babi Yorkshire dengan cepat, murah dan sederhana.

the fluorescence method can differentiate between Brahma
n cattles
and Yorkshire pigs quickly, cheaply and simply.
