Abstract

Manajemen persediaan yang efektif merupakan elemen kunci dalam mendukung kelancaran operasi dan keberhasilan bisnis dalam industri makanan cepat saji yang menghadapi dinamika permintaan tinggi. CV X, sebagai salah satu pelaku industri makanan cepat saji di Jawa Timur, saat ini menghadapi masalah overstock dan stockout yang menghambat efisiensi operasional. Selain itu, keterbatasan kapasitas cold storage menambah tantangan dalam menjaga keseimbangan tingkat persediaan pada industri makanan cepat saji dengan demand yang berfluktuasi. Di sisi lain, industri makanan cepat saji telah beralih dari sistem berbasis push menuju sistem berbasis pull, yang mengutamakan fleksibilitas dan efisiensi dalam memenuhi permintaan pelanggan. Penelitian ini bertujuan untuk menganalisis manajemen persediaan pada CV X dengan menggunakan metode Demand-Driven Material Requirements Planning (DDMRP) untuk mengatasi permasalahan overstock dan stockout. DDMRP dipilih untuk mengatasi masalah diatas karena mengintegrasikan pengelolaan buffer stock dan penyesuaian inventori secara dinamis berdasarkan sinyal permintaan secara real-time, sehingga lebih responsif terhadap permintaan aktual sekaligus mengoptimalkan pemanfaatan kapasitas penyimpanan cold storage yang terbatas. Data sekunder dari CV X tahun 2023, yang mencakup data produksi, data penjualan, dan data persediaan dianalisis menggunakan pendekatan deskriptif dan kuantitatif. Hasil penelitian menunjukkan bahwa metode DDMRP mampu menurunkan rata-rata tingkat persediaan sebesar 6,62%, menurunkan overstock sebesar 96,29%, serta menurunkan stockout sebesar 88,51%.

Effective inventory management is a critical element in ensuring smooth operations and business success, particularly in the fast-food industry, which is characterized by highly dynamic demand. CV X, a fast-food company based in East Java, is currently facing challenges related to overstock and stockout conditions that hinder operational efficiency. Additionally, limited cold storage capacity further complicates efforts to maintain inventory balance amidst fluctuating demand. As the industry shifts from a push-based to a pull-based system—prioritizing flexibility and responsiveness in meeting customer demand—an adaptive inventory management approach becomes essential. This study aims to analyze the inventory management system at CV X through the application of the Demand-Driven Material Requirements Planning (DDMRP) method to address the issues of overstock and stockout. DDMRP is chosen due to its ability to integrate dynamic buffer stock control and inventory adjustments based on real-time demand signals, enabling a more responsive supply chain while optimizing the use of limited cold storage capacity. This research employs secondary data from CV X for the year 2023, including production, sales, and inventory records, analyzed using descriptive and quantitative methods. The results indicate that the implementation of DDMRP successfully reduced the average inventory level by 6.62%, decreased overstock by 96.29%, and lowered stockout occurrences by 88.51%.
