Abstract
Susu merupakan minuman dengan sumber nutrisi lengkap dan kompleks yang umum dikonsumsi sehari-hari. Susu tinggi protein merupakan salah satu produk pangan fungsional yang semakin diminati oleh masyarakat seiring dengan meningkatnya kesadaran akan pentingnya asupan gizi, khususnya protein. Produk ini banyak digunakan dalam berbagai segmen pasar, seperti minuman kesehatan, nutrisi olahraga, serta produk pangan khusus. Di Indonesia, permintaan terhadap susu tinggi protein terus mengalami peningkatan, didorong oleh pertumbuhan industri pangan dan perubahan gaya hidup masyarakat. Namun, ketersediaan produk susu tinggi protein dalam negeri masih terbatas dan sebagian masih bergantung pada impor bahan baku maupun produk jadi. Oleh karena itu, pendirian pabrik susu tinggi protein di Indonesia memiliki potensi yang menjanjikan untuk memenuhi kebutuhan pasar domestik sekaligus mengurangi ketergantungan impor. Proses pembuatan susu bubuk tinggi protein dengan pemisahan lemak dari susu segar melalui sentrifugasi, lalu susu melalui proses ultrafiltrasi diafiltrasi untuk mengurangi kandungan laktosa dan ash sehingga menghasilkan susu rendah lemak. Kemudian susu dicampurkan dengan bahan tambahan skim milk powder, maltodextrin, dan whey protein concentrate sehingga menjadi susu tinggi protein cair. Susu tinggi protein cair lalu dievaporasi hingga mencapai 55% TS dan dilanjutkan proses pengeringan dengan spray dryer hingga menjadi susu bubuk tinggi protein. Pabrik ini direncanakan memiliki kapasitas produksi sebesar 16.000 ton/tahun dengan waktu operasi kerja 330 hari per tahun. Pabrik akan dibangun di wilayah Pasuruan, Jawa Timur dalam rentang waktu 3 tahun dengan umur pabrik 15 tahun. Diperlukan total biaya Fixed Capital Investment (FCI) sebesar Rp1.035.140.068.524; Working Capital Investment sebesar Rp 182.671.776.798; Total Capital Investment (TCI) Rp1.217.811.845.323; Total Production Cost (TPC) Rp2.313.649.844.691. Berdasarkan analisis ekonomi, Pabrik susu bubuk tinggi protein ini menunjukkan daya tarik rentabilitas yang cukup tinggi, yakni Net Present Value (NPV) sebesar Rp 3.549.018.561.138,96 dengan nilai IRR 27,06%, dengan bunga bank sebesar 8,44% per tahun, laju inflasi 1,66% per tahun, Pay Out Time (POT) 3,26 tahun, dan Break Even Point (BEP) pada 48,08% sehingga pabrik ini layak untuk didirikan.

Milk is a widely consumed beverage that provides a complete and complex source of nutrients. High-protein milk is one of the functional food products that has gained increasing consumer demand due to growing awareness of the importance of adequate nutritional intake, particularly protein. This product is widely utilized in various market segments, including health beverages, sports nutrition, and specialized food products. In Indonesia, the demand for high-protein milk has continued to increase, driven by the growth of the food industry and changes in consumer lifestyles. However, the domestic availability of high-protein milk products remains limited, with a significant dependence on imported raw materials and finished products. Therefore, establishing a high-protein milk powder manufacturing plant in Indonesia presents a promising opportunity to meet domestic market demand while reducing import dependency. The production process begins with fat separation from fresh milk through centrifugation. The resulting milk is subsequently subjected to ultrafiltration and diafiltration processes to reduce its lactose and ash contents, producing low-fat milk. The low-fat milk is then blended with skim milk powder, maltodextrin, and whey protein concentrate to produce liquid high-protein milk. The liquid product is concentrated by evaporation to a total solids content of 55%, followed by drying using a spray dryer to obtain high-protein milk powder. The proposed plant is designed with an annual production capacity of 16,000 tons and an operating schedule of 330 days per year. The plant will be located in Pasuruan, East Java, with a planned construction period of three years and an operational lifetime of 15 years. The estimated economic parameters include a Fixed Capital Investment (FCI) of IDR 1,035,140,068,524, a Working Capital Investment (WCI) of IDR 182,671,776,798, a Total Capital Investment (TCI) of IDR 1,217,811,845,323, and a Total Production Cost (TPC) of IDR 2,313,649,844,691. Based on the economic feasibility analysis, the proposed high-protein milk powder plant demonstrates strong profitability, with a Net Present Value (NPV) of IDR 3,549,018,561,138.96, an Internal Rate of Return (IRR) of 27.06%, assuming a bank interest rate of 8.44% per annum and an inflation rate of 1.66% per annum. The project also achieves a Payback Period (PBP) of 3.26 years and a Break-Even Point (BEP) of 48.08%. These economic indicators demonstrate that the proposed plant is financially feasible and economically viable for establishment.
