Abstract
Kedelai (Glycine max L.) merupakan salah satu komoditas pangan yang memiliki kandungan protein nabati tinggi serta berpotensi untuk dikembangkan menjadi berbagai produk olahan bernilai tambah. Salah satu produk yang memiliki prospek pasar yang baik adalah susu bubuk tinggi protein dari biji kedelai. Produk ini menjadi alternatif pengganti susu sapi karena memiliki kandungan protein yang tinggi, bebas laktosa, rendah kolesterol, serta mengandung senyawa bioaktif seperti isoflavon yang berperan sebagai antioksidan.Kebutuhan masyarakat terhadap pangan bergizi tinggi terus meningkat seiring dengan meningkatnya kesadaran akan pentingnya pola hidup sehat. Susu bubuk tinggi protein berbahan baku biji kedelai merupakan salah satu alternatif pangan yang memiliki kandungan protein tinggi, bebas laktosa, serta sesuai dikonsumsi oleh masyarakat dengan intoleransi laktosa maupun yang menerapkan pola makan berbasis nabati. Oleh karena itu, perancangan pabrik susu bubuk tinggi protein dari biji kedelai dilakukan untuk memenuhi kebutuhan pasar sekaligus meningkatkan nilai tambah komoditas kedelai di Indonesia. Pabrik dirancang dengan kapasitas produksi 15.000 ton/tahun dan beroperasi secara kontinu selama 330 hari/tahun dengan waktu operasi 24 jam/hari. Proses produksi meliputi tahap penerimaan kedelai, pencucian, penggilingan, pemasakan, penyaringan, pencampuran, pasteurisasi, evaporasi,homogenisasi, dan pengeringan. Produk yang dihasilkan berupa susu bubuk tinggi protein dengan kadar protein yang memenuhi standar mutu pangan. Lokasi pabrik direncanakan berada di Kabupaten Banyuwangi, Jawa Timur, dengan mempertimbangkan ketersediaan bahan baku, akses transportasi, utilitas, tenaga kerja, dan peluang pemasaran. Pabrik ini dibangun dalam rentang waktu 2 tahun dengan umur 15 tahun. Berdasarkan analisis ekonomi, didapatkan IRR sebesar 16,67 % dimana nilai ini berada di atas bunga pinjaman bank, sehingga modal dapat kembali dalam waktu 1,48 tahun, lebih rendah dari waktu pengembalian modal dari pihak pemberik yakni selama 10 tahun, sehingga pabrik ini layak untuk didirikan

Soybean (Glycine max L) is a food commodity rich in plant-based protein with the potential to be developed into various value-added processed products. High-protein soybean milk powder is one such product with promising market prospects. It serves as an alternative to cow's milk due to its high protein content, lactose-free nature, and low cholesterol levels, as well as the presence of bioactive compounds like isoflavones, which act as antioxidants. Public demand for highly nutritious food continues to rise alongside growing awareness of the importance of a healthy lifestyle. High-protein soybean milk powder is a suitable food alternative being high in protein and lactose-free for individuals with lactose intolerance and those following plant-based diets. Consequently, a plant for producing high-protein soybean milk powder has been designed to meet market demand while enhancing the value of the soybean commodity in Indonesia. The plant is designed with a production capacity of 15,000 tons per year, operating continuously for 330 days annually, 24 hours a day. The production process comprises soybean receiving, washing, grinding, cooking, filtration, mixing, pasteurization, evaporation, homogenization, and drying. The resulting product is a high-protein milk powder that meets food quality standards. The plant is planned to be located in Banyuwangi, East Java, taking into account raw material availability, transportation access, utilities, labor, and marketing opportunities. The construction period is two years, with an operational lifespan of 15 years. Economic analysis yielded an Internal Rate of Return (IRR) of 16,67% figure exceeding bank loan interest rates resulting in a payback period of 1,48 years. This is well within the 10-year limit set by the funding provider, indicating that the plant is a viable investment.
