Abstract

Konsumsi gula dunia terus meningkat seiring pertumbuhan populasi dan perkembangan industri pangan. Namun, meningkatnya prevalensi penyakit metabolik, khususnya diabetes melitus, telah mendorong perubahan pola konsumsi masyarakat menuju pemanis rendah kalori yang lebih sehat. Berbagai kebijakan pengurangan konsumsi gula, seperti penerapan sugar tax, reformulasi produk pangan, serta meningkatnya tren clean label dan penggunaan bahan alami, turut mempercepat pertumbuhan pasar pemanis alami. Salah satu pemanis alami yang memiliki prospek paling menjanjikan adalah ekstrak stevia karena memiliki tingkat kemanisan tinggi, rendah kalori, serta aman dikonsumsi oleh penderita diabetes. Kapasitas pabrik yang akan didirikan sebesar 16,7ton/tahun dengan bahan baku daun stevia rebaudiana dari perkebunan lokal di Minahasa Utara serta impor dari India dan China. Lokasi pabrik didirikan di Kabupaten Minahasa Utara, Sulawesi Utara. Metode yang dipilih dalam proses produksi pemanis ekstrak stevia adalah proses ekstraksi enzimatis dengan enzim selulase dan purifikasi dengan membran multifiltrasi MF-UF-NF. Larutan ekstrak steviosida kemudian masuk ke tahap kristalisasi dua tahap untuk memperoleh kristal dengan kemurnnian 99%. Pabrik pemanis stevia dengan kapasitas 16,7 ton/tahun beroperasi selama 330 hari kerja setiap tahunnya. Dengan laju pengembalian modal atau IRR sebesar 13,37% didapatkan waktu pengembalian modal (POT) selama 4,66 tahun, dan NPV sebesar Rp61.841.348.610.

Global sugar consumption continues to increase in line with population growth and the development of the food industry. However, the increasing prevalence of metabolic diseases, particularly diabetes mellitus, has driven a shift in consumer behavior toward healthier, low-calorie sweeteners. Various policies to reduce sugar consumption, such as the implementation of sugar taxes, reformulation of food products, and the increasing trend of clean labels and the use of natural ingredients, have contributed to the growth of the natural sweetener market. One of the most promising natural sweeteners is stevia extract, due to its high sweetness, low calorie content, and safety for diabetics. The planned factory will have a capacity of 16.7 tons per year, using stevia rebaudiana leaves from local plantations in North Minahasa and imports from India and China. The factory will be located in North Minahasa Regency, North Sulawesi. The production method for stevia extract sweeteners is enzymatic extraction using cellulase enzymes and purification using MF-UF-NF multifiltration membranes. The stevioside extract solution then undergoes a two-stage crystallization process to obtain crystals with 99% purity. The stevia sweetener factory, with a capacity of 16.7 tons/year, operates for 330 working days per year. With an IRR of 13.37%, the payback period (POT) is 4.66 years and the NPV is Rp61,841,348,610.
