Abstract
Santan cair kemasan merupakan produk pangan yang memiliki permintaan tinggi dan banyak dimanfaatkan sebagai bahan baku maupun produk siap konsumsi. Namun, santan memiliki stabilitas emulsi yang rendah sehingga rentan mengalami pemisahan fase selama penyimpanan. Oleh karena itu, pabrik santan cair kemasan dirancang dengan modifikasi enzimatis menggunakan protein deamidase untuk meningkatkan stabilitas emulsi dan mutu produk. Pabrik ini dirancang dengan kapasitas produksi 816 ton/tahun yang berlokasi di Kota Dumai, Provinsi Riau dengan target mulai beroperasi pada tahun 2030. Proses produksi meliputi persiapan bahan baku, ekstraksi santan, penambahan stabilisasi, homogenisasi, modifikasi enzimatis, sterilisasi, dan pengemasan aseptik. Berdasarkan analisis ekonomi, diperoleh Total Capital Investment (TCI) sebesar Rp198.585.248.801 dengan Internal Rate of Return (IRR) sebesar 14,6%, Pay Out Time (POT) selama 2 tahun, dan Break Even Point (BEP) sebesar 33%. Hasil analisis menunjukkan bahwa pabrik layak untuk didirikan.

Packaged liquid coconut milk is a food product with high market demand and is widely used a both an industrial food ingredient and a ready-to-consume product. However, its low emulsion stability makes it susceptible to phase separation during storage. Therefore, a packaged liquid coconut milk plant utilizing enzymatic modification with protein deamidase was designed to improve emulsion stability and overall product quality. The plant was designed with a production capacity of 816 tonnes per year and is planned to be located in Kota Dumai, Provinsi Riau, with commercial operation targeted to commence in 2030. The production process consist of raw material preparation, coconut milk extraction, stabilizer addition, homogenization, enzymatic modification, sterilization, and aseptic packaging. Based on economic analysis, the plant requires a Total Capital Investment (TCI) of Rp198.585.248.801 with Internal Rate of Return (IRR) of 14,8%, a Pay Out Time (POT) of 2 years, and a Break Even Point (BEP) of 33%. These economic indicators demonstrate that the proposed plant is economically feasible for establishment.
