Abstract
Pabrik Mosof (Modified Sorghum Flour) Skala UMKM dengan proses fermentasi menggunakan Lactobacillus plantarum memiliki kapasitas produksi sebesar 100 ton per tahun. Lokasi pendirian pabrik direncanakan di Kabupaten Lamongan, Jawa Timur. Pemilihan lokasi ini didasarkan oleh ketersediaan bahan baku dan faktor lainnya, dimana Kabupaten Lamongan merupakan daerah penghasil sorgum di Jawa Timur. Dalam pemenuhan kapasitas tahunan, pabrik akan beroperasi secara kontinyu 24 jam per hari selama 330 hari per tahun. Sorgum yang telah dikupas dan dicuci akan direndam dengan larutan NaOH selama 4 jam untuk menurunkan kadar antinutrisi. Proses fermentasi dilakukan pada suhu 37°C selama 48 jam dengan Lactobacillus plantarum. Fase solid akan dikeringkan menggunakan rotary dryer hingga kadar air mencapai 10%. Tepung yang dihasilkan akan diayak dengan screener menggunakan ukuran 60 mesh. Pabrik Mosof (Modified Sorghum Flour) ini dirancang sebagai perusahaan berskala UMKM. Berdasarkan studi evaluasi ekonomi pabrik, penaksiran modal (CAPEX) sebesar Rp2.834.417.566, biaya operasional (OPEX) sebesar Rp5.466.846.284, dengan estimasi hasil penjualan sebesar Rp7.103.212.331 per tahun. Selain itu berdasarkan analisa ekonomi terhadap pabrik ini menunjukkan nilai kekayaan yang dihasilkan (NPV) sebesar Rp7.873.806.758 dan laju pengembalian modal (IRR) sebesar 23,89% dengan bunga pinjaman sebesar 8% per tahun. Waktu pengembalian modal (POT) selama 5 tahun 10 bulan. Berdasarkan analisa ekonomi dapat disimpulkan bahwa Pabrik Mosof (Modified Sorghum Flour) Skala UMKM dengan proses fermentasi menggunakan Lactobacillus plantarum dengan kapasitas 100 ton per tahun layak untuk didirikan.

The Mosof (Modified Sorghum Flour) production plant using fermentation process by Lactobacillus plantarum is designed with a capacity of 100 tons per year. The location is planned to be in Lamongan, East Java, based on the availability of raw materials and other factors. To fulfill the annual capacity, the plant will operate continuously 24 hours per day for 330 days per year. The sorghum grain was soaked by NaOH solution for 4 hours to reduce the levels of antinutrients. Using Lactobacillus plantarum, the mixture was fermented at 37°C for 48 hours. The solid phase will be dried using a rotary dryer until the moisture content reaches 10%. The flour is sieved in a screener using a 60 mesh size. The Mosof (Modified Sorghum Flour) production plant is designed as an MSMEs scale plant. Based on economic evaluation study, the estimated plant’s capital (CAPEX) is Rp. 2,834,417,566, operational costs (OPEX) is Rp. 5,466,846,284, with estimated sales proceeds of Rp. 7,103,212,331 per year. In addition, based on the study, it shows that the net present value (NPV) of Rp. 7,873,806,758 and the rate of return on investment (IRR) of 23.89% with a loan interest of 8% per year. Payback period (POT) for 5 years 10 months. Based on economic evaluation study, it can be concluded that the Plant Design of MSMEs Scale Mosof (Modified Sorghum Flour) produsction using fermentation process by Lactobacillus plantarum with a capacity of 100 tons per year is feasible to set up.
