Abstract
Manusia membutuhkan konsumsi lemak maksimum 67 Gr atau setara dengan 5 sendok makan menurut Kementrian Kesehatan RI 2020. Hal tersebut dibuktikan dengan survei konsumsi minyak goreng sawit oleh rumah tangga Indonesia yang mengalami peningkatan dari tahun 2019 hingga tahun 2022 menurut Setjen Pertanian RI 2020. Dengan tingginya kebutuhan masyarakat akan minyak goreng masih belum diimbangi dengan penggunaan minyak goreng yang berkualitas. Viskositas yang terlalu tinggi memiliki kandungan asam lemak jenuh dimana konsumsi lemak jenuh dengan kadar tinggi akan memicu beragam penyakit seperti kolesterol, penyakit jantung, diabetes, stroke dan lain sebagainya. Selain itu, viskositas yang sangat rendah rentan mengandung acrilamide (C₂H₅NO) yang beracun bagi tubuh. Dengan urgensitas monitoring viskositas dari industri minyak goreng yang mengacu pada SNI 7709:2019 dimana belum terdapat relase produk untuk monitoring viskositas, maka dari itu peneliti menginovasi sistem monitoring viskositas minyak goreng yang bertujuan untuk memudahkan industri untuk melakukan pemantauan kualiatas minyak goreng secara real time sehingga dapat diakses dari HMI baik dari local plant maupun menggunakan website server. Sistem monitoring tersebut menggunakan metode rotational viskometer dengan penggunaan Sensor ACS721, Sensor FC03, Motor Stepper Nema 23 dan Raspberry Pi 3B+. Validasi Sensor FC03 akurasi sebesar 98.67% dan Sensor ACS721 memiliki persentase akurasi sebesar 98.23%. Pengujian sistem didapatkan akurasi viskositas minyak goreng sanco memiliki 99%, minyak curah 92% dan oli SAE 15W-40 88% dan air 68%. Range monitoring pengukuran viskositas dengan nilai rata-rata 0.008 Pa.s sampai dengan 0.066 Pa.s.

Humans need to consume a maximum of 67 grams of fat or the equivalent of 5 tablespoons according to the Indonesian Ministry of Health 2020. This is evidenced by a survey on consumption of palm cooking oil by Indonesian households which has increased from 2019 to 2022 according to the Indonesian Agriculture Secretariat General 2020. With the high demand society's need for cooking oil has not been matched by the use of quality cooking oil. Viscosity that is too high has a saturated fatty acid content where consumption of high levels of saturated fat will trigger various diseases such as cholesterol, heart disease, diabetes, stroke and so on. In addition, the very low viscosity is prone to contain acrilamide (C₂H₅NO) which is toxic to the body. With the urgency of monitoring the viscosity of the cooking oil industry which refers to SNI 7709: 2019 where there is no product relation for monitoring viscosity, therefore researchers innovate a cooking oil viscosity monitoring system which aims to make it easier for the industry to monitor the quality of cooking oil in real time so that it can accessed from the HMI either from the local plant or using a website server. The monitoring system uses the rotational viscometer method using the ACS721 Sensor, FC03 Sensor, Nema 23 Stepper Motor and Raspberry Pi 3B+. Testing the system obtained the viscosity accuracy of sanco cooking oil having 99%, 92% bulk oil and 88% SAE 15W-40 oil and 68% water. Viscosity measurement monitoring range with an average value of 0.008 Pa.s to 0.066 Pa.s.
