Abstract
Kebersihan pada makanan perlu memperhatikan kebersihan pada bahan makanan dan alat masak, serta sanitasi lingkungan dapur. Di Indonesia, Menteri Kesehatan RI telah membuat
peraturan tentang syarat kesehatan jajanan dalam Permenkes SNI Nomor 236/MENKES/PER/2003 agar para pelaku usaha memperhatikan kebersihan sehingga masyarakat tidak mendapat penyakit dari makanan yang dikonsumsi. Minuman dengan tambahan es batu merupakan salah satu produk yang cukup mudah ditemui di berbagai tempat, salah satunya adalah di kantin Institut Teknologi Sepuluh Nopember Surabaya. Es batu terbuat dari air yang dipadatkan melalui pembekuan dengan
suhu dibawah 0°C. Es batu baiknya menggunakan air bersih layak minum karena akan dikonsumsi oleh konsumen. Syarat kelayakan es batu dapat dikonsumsi oleh konsumen telah tercantum dalam SNI No. 3839 Tahun 2019 dan PerBPOM RI No.13 Tahun 2019 dengan nilai jumlah mikroba melalui perhitungan Angka Lempeng Total (ALT) berada diantara 10^2
-10^4 koloni/mL. Dari hasil perhitungan menggunakan metode ALT terdapat dua sampel minuman dengan tambahan es batu
yang memiliki nilai ALT lebih dari batas cemaran mikroba menurut BPOM sehingga tidak layak konsumsi, yaitu sampel FV1 sebanyak 2,9x10^6 CFU/mL dan sampel SP1 sebanyak 1,86x10^4
CFU/mL. Kemudian dari hasil identifikasi bakteri melalui uji mikrobiologi secara makroskopis dan mikroskopis ditemukan tiga genus bakteri yang mencemari minuman di beberapa kantin di Institut Teknologi Sepuluh Nopember, yaitu genus Klebsiella dan genus Proteus yang termasuk dalam bakteri Enterobacteriaceae, serta ditemukan juga bakteri non Enterobacteriaceae, yaitu genus Enterococcus. Ditemukannya ketiga genus tersebut menunjukkan adanya kontaminasi pada es batu maupun minuman yang dijual di beberapa kantin yang di Institut Teknologi Sepuluh Nopember.

Hygienic food needs to pay attention to the hygiene of food ingredients and cooking utensils, aswell as the sanitation of the kitchen environment. In Indonesia, the Indonesian Minister of Health has made regulations on the health requirements of snacks in Permenkes SNI Number 236/MENKES/PER/2003 so that business actors pay attention to hygiene so that people do not get diseases from the food consumed. Drinks with additional ice cubes are one of the products that are quite easy to find in various places, one of which is in the canteen of the Sepuluh Nopember Institute
of Technology Surabaya. Ice cubes are made from water that is solidified through freezing at temperatures below 0°C. Ice cubes should use clean drinking water because it will be consumed by consumers. The eligibility requirements for ice cubes to be consumed by consumers have been listed in SNI No. 3839 of 2019 and PerBPOM RI No.13 of 2019 with the value of the number of microbes through the calculation of Total Plate Numbers (TPC) between 10^2-10^4 colonies / mL. From the results of calculations using the TPC method, there were two beverage samples with additional ice cubes that had TPC values greater than the microbial contamination limit according to BPOM so that they were not suitable for consumption, namely sample FV1 as much as 2.9x10^6 CFU/mL and sample SP1 as much as 1.86x10^4 CFU/mL. Then from the results of bacterial identification through macroscopic and microscopic microbiological tests, three genus of bacteria were found that contaminated drinks in several canteens at the Sepuluh November Institute of Technology, namely
the Klebsiella genus and the Proteus genus which are included in the Enterobacteriaceae bacteria, and also found non-Enterobacteriaceae bacteria, namely the Enterococcus genus. The discovery of the three genus indicates contamination of ice cubes and drinks sold in several canteens at the Sepuluh Nopember Institute of Technology
