Abstract

Kopi adalah salah satu minuman yang menjadi pendamping dalam aktivitas masyarakat saat ini, yang popularitasnya meningkat dalam beberapa tahun terakhir. Peningkatan ini dapat dilihat dari perkembangan sektor kafe sebagai tempat untuk bersantai dengan teman atau keluarga dan juga sebagai tempat untuk bekerja. Dari fenomena ini, permintaan kopi juga meningkat dalam beberapa tahun terakhir, baik secara nasional maupun internasional. Kopi sendiri memiliki berbagai jenis seperti Arabika, Robusta, Liberika, dan Excelsa. Setiap jenis kopi memiliki karakteristik rasa yang berbeda. Kopi Excelsa memiliki rasa yang unik dan memiliki tingkat produksi terkecil di antara ketiga jenis kopi di dunia, yaitu hanya sekitar 7% hingga 8%. Kopi ini paling sering ditemukan di kawasan Asia Tenggara termasuk di Jawa Timur, Indonesia. Wonosalam adalah salah satu desa di Jombang yang memiliki perkebunan dan produksi kopi. Koperasi kopi Wonosalam didirikan pada tahun 2021 untuk menyatukan sebagian besar (jika tidak semua) petani dan produsen kopi, sehingga dapat bersaing dengan merek lain. Jenis kopi Excelsa dipilih sebagai produk andalan yang direkomendasikan oleh pemerintah. Permintaan kopi Wonosalam dapat mencapai 20 ton setiap tahun. Tidak adanya dokumen pengendalian kualitas yang baik di koperasi kopi Wonosalam menyebabkan kualitas produk kopi yang dihasilkan tidak konsisten, terutama dalam hal rasa dan aroma biji kopi yang merupakan kualitas utama dalam produksi kopi. Untuk alasan ini, perlu untuk merancang dokumen pengendalian kualitas yang mengacu pada ISO 9001:2015, Specialty Coffee America Association (SCAA), dan Badan Standardisasi Nanional sebagai dasar utama untuk merancang pengendalian kualitas untuk koperasi kopi Wonosalam. Kopi ini telah dijual terutama untuk pasar nasional dan telah mulai mendapatkan pelanggan dari luar negeri. Merancang sistem manajemen kualitas dapat membantu koperasi kopi Wonosalam meningkatkan kualitas produk dengan menyediakan pedoman dan sistem inspeksi yang lebih memadai serta memberikan masukan untuk perbaikan berkelanjutan. Dengan merancang online sistem untuk kualitas, terutama dalam bentuk kualitas, akan lebih mudah untuk memeriksa kualitas secara online dan melacak kualitas kopi dalam batch produksi kopi. Ini juga merupakan langkah pertama bagi koperasi kopi Wonosalam untuk memasuki era digitalisasi.

Coffee is one of the drinks that is a companion in today's community activities, whose popularity has increased in recent years. This increase can be seen from the development of the cafe sector as a place used to hang out with friends or family and also as a place to work. From this phenomenon, demand for coffee has also increased in recent years, both nationally and internationally. Coffee itself has various types such as Arabica, Robusta, Liberica, and Excelsa. Each type of coffee has different taste characteristics. Excelsa coffee has a unique flavor and has the smallest production level among the three types of coffee in the world, namely only around 7% to 8% It is most often found in Southeast Asia region including in East Java Indonesia. Wonosalam is one of the villages in Jombang with a coffee plantation and production. The Wonosalam coffee cooperative was established in 2021 to unify most (if not all) coffee farmers and producers, so it could compete with other brands. Excelsa types of coffee are selected as its key niche product as suggested by the government. Demand for Wonosalam coffee can reach 20 tons every year. The absence of good quality control documents in the Wonosalam coffee cooperative causes the quality produced in coffee products to be inconsistent, especially in terms of taste and aroma of coffee beans which are the main quality in coffee production. For this reason, it is necessary to design quality control documents that refer to ISO 9001:2015 as the main basis for designing quality control for the Wonosalam coffee cooperative and using Specialty Coffee America Association (SCAA), Badan Standardisasi Nasional standard to perform procedure.. The coffee has been sold mostly for the national market and has started to get customers from overseas. Designing a quality management system can help the Wonosalam coffee cooperative improve product quality by providing more adequate guidelines and inspection systems and providing input for continuous improvement. By designing online s for quality, especially in quality forms, it is easier to check quality online and to track coffee quality in coffee production batches. This is also the first step for the Wonosalam coffee cooperative to enter the digitalization era.
