Abstract
Cane molasses merupakan produk sampingan dari proses pembuatan gula yang berwarna coklat tua dan kental yang dihasilkan selama proses kristalisasi. Mikroorganisme yang dihasilkan oleh cane molasses mempunyai aplikasi penting dalam bidang pengolahan pangan, salah satunya MSG. Pada penelitian ini dilakukan pengujian pada cane molasses dan MSG menggunakan instrumen AAS. Dilakukan validasi metode uji kalsium dan kalium pada cane molasses untuk menilai kinerja alat, serta dilakukan uji kandungan kalsium, kalium, kadmium, dan timbal pada MSG. Hasil pengujian metode analisis pada uji kalsium didapatkan nilai koefisien determinasi (R2) sebesar 0,9999; LoD sebesar 0,057 mg/L; LoQ sebesar 0,189 mg/L; presisi dengan rata-rata konsentrasi dan standar deviasi sebesar 0,7701±7,04 x 10^(-3); %RSD sebesar 0,0091%; akurasi sebesar 100,21%. Pada uji kalium didapatkan nilai koefisien determinasi (R2) sebesar 0,9999; LoD sebesar 0,034 mg/L; LoQ sebesar 0,114 mg/L; presisi dengan rata-rata konsentrasi dan standar deviasi sebesar 0,7006±4,863 x 10^(-2); %RSD sebesar 0,0694%; akurasi sebesar 100,00%. Metode analisis yang digunakan pada penelitian ini dinyatakan valid karena parameter validasi metode seperti uji Linearitas, LoD, LoQ, presisi, dan akurasi memenuhi syarat keberterimaan dan sesuai untuk digunakan sebagai metode pengujian standar di PT Ajinomoto Indonesia Mojokerto Factory. Hasil LoD dan LoQ yang didapatkan pada validasi metode menggunakan cane molasses dibandingkan dengan hasil uji kalsium dan kalium pada MSG menggunakan larutan standar yang sama. Hasil tersebut menunjukkan bahwa kandungan kalsium dan kalium pada masing-masing ukuran kristal MSG dalam batas yang aman sesuai dengan baku mutu maksimum yang dipesyaratkan (SNI) 01-4452-1998 sebesar 1,25-1,75 mg/L untuk kalium dan 1 mg/L untuk kalsium berdasarkan Peraturan Menteri Perindustrian RI. Hasil uji kadmium pada MSG didapatkan nilai LoD sebesar 0,004 mg/L; LoQ sebesar 0,016 mg/L, sedangkan hasil uji timbal pada MSG didapatkan nilai LoD sebesar 0,026 mg/L; LoQ sebesar 0,088 mg/L. Berdasarkan nilai LoD dan LoQ yang didapatkan menunjukkan tidak adanya kandungan kadmium pada masing-masing ukuran kristal MSG, dan terdapat kandungan timbal pada ukuran kristal MSG RC,LC, dan FCA pada batas yang aman sesuai dengan baku mutu maksimum yang dipersyaratkan (SNI) 3556:2016 sebesar 10 mg/L untuk timbal dan 0,5 mg/L untuk kadmium.

Cane Molasses is a by-product of the sugar manufacturing process that is dark brown and viscous produced during the crystallization process. Microorganism derived from cane molasses have significant application in the food processing industry, including MSG production. This study aimed to validate the method for testing calcium and potassium in cane molasses to assess instrument performance, as well as analyze the content of calsium, potassium, cadmiun, and lead in MSG using AAS. In the analysis method validation for calcium, the coefficient of determination (R2) is 0,9999; LoD is 0,057 mg/L; LoQ is 0,189 mg/L; precision with an average concentration and standard deviation is 0,7701±7,04 x 10^(-3); %RSD value is 0,0091%; accuracy is 100,21%. For potassium analysis, coeffisient of a determination (R2) is 0,9999; LoD is 0,034 mg/L; LoQ is 0,114 mg/L; precision with an average and standard deviation is 0,7006±4,863 x 10^(-2); %RSD value is 0,0694%; and accuracy is 100,00%. The analytical method used in this Final Project research is declared valid as validation parameters such as Linearity, LoD, LoQ, precision, and accuracy tests suitable with the acceptance criteria and are suitable for use as standard testing methods at PT Ajinomoto Indonesia Mojokerto Factory. The LoD and LoQ results obtained in method validation using cane molasses were compared with the results of calcium and potassium test on MSG using the same standard solution. These results indicate that the calcium and potassium content in each MSG crystal size within safe limits as per the maximum quality requirements stipulated in the Indonesian National Standard (SNI) 01-4452-1998, which specify 1,25-1,75 mg/L for potassium and 1 mg/L for calcium based on the Regulation of the Minister of Industry of the Republic of Indonesia.The cadmium test result on MSG obtained a LoD is 0,004 mg/L; LoQ is 0,016 mg/L, confirming the absence of cadmium content in each MSG crystal size. Lead test result on MSG obtained a LoD is 0,026 mg/L; LoQ is 0,088 mg/L, indicating the presence of lead in MSG crystal size RC, LC, and FCA within safe limits as per the maximum quality requirements stipulated in the Indonesian National Standard (SNI) 3556:2016, which specify 10 mg/L for lead and 0,5 mg/L for cadmium.
