Abstract

PT. Sindabad merupakan salah satu perusahaan swasta yang bergerak dalam bidang pengolahan hasil laut di Kawasan Industri PIER Pasuruan, Jawa Timur. Baby Gurita merupakan salah satu produk produksi PT. Sindabad. Penelitian ini bertujuan untuk menganalisis dan meningkatkan efisiensi proses produksi pada Divisi Baby Gurita PT. Sindabad dengan menerapkan konsep Lean Manufacturing.
Metode yang digunakan dalam penelitian ini adalah Value Stream Mapping (VSM) untuk menggambarkan aliran proses produksi dan mengidentifikasi berbagai waste yang terjadi dalam setiap sub-proses. Hasil penelitian menunjukkan bahwa terdapat 7 jenis waste yang ditemukan dalam proses produksi, yaitu defect, overproduction, waiting, transportation, inventory, movement, dan excess processing. Berdasarkan analisis akar penyebab, ditemukan bahwa faktor-faktor penyebab waste antara lain alokasi bahan baku yang berlebihan, kurangnya toleransi terhadap overproduction, serta kurangnya kontrol dan pemantauan spesifikasi produksi. Selain itu, aktivitas non-value adding seperti penerimaan bahan baku beku, penyimpanan sementara, dan pelelehan juga menyumbang terhadap pemborosan. Beberapa aktivitas yang diperlukan namun tidak memberikan nilai tambah (Necessary Non Value Adding) seperti pencucian, penataan pan, pengepakan, dan pelabelan juga ditemukan dalam proses ini. Berdasarkan temuan tersebut, dilakukan rekomendasi perbaikan, antara lain penentuan batasan alokasi bahan baku, pemberian toleransi terhadap kelebihan produksi, pemantauan ketat pada setiap tahap produksi, pengaturan ketersediaan
stok es, pemeliharaan mesin pendingin secara berkala, serta perbaikan tata letak ruang pendingin. Implementasi dari rekomendasi perbaikan ini dapat mengurangi waste, meningkatkan efisiensi proses produksi, dan memastikan kualitas produk yang lebih baik dan konsisten di PT. Sindabad.

PT. Sindabad is a private company engaged in processing marine products in the PIER Pasuruan Industrial Area, East Java. Baby Octopus is one of the products produced by PT. Sindabad. This study aims to analyze and improve the
production process efficiency in the Baby Gurita Division of PT. Sindabad by implementing Lean Manufacturing principles. The method used in this research is Value Stream Mapping (VSM) to map the production flow and identify various
wastes occurring in each sub-process. The results show that there are seven types of waste identified in the production process: defect, overproduction, waiting, transportation, inventory, movement, and excess processing. Root cause analysis revealed that the factors contributing to waste include excessive raw material allocation, lack of tolerance for overproduction, and insufficient control and monitoring of production specifications. Furthermore, non-value-adding activities such as receiving frozen raw materials, temporary storage, and thawing also contribute to waste. Necessary Non-Value Adding (NNVA) activities, such as washing, pan arrangement, packaging, and labeling, were also found in the
process. Based on these findings, improvement recommendations were made, including setting limits on raw material allocation, establishing tolerance for
overproduction, closely monitoring each production stage, ensuring ice stock availability, performing regular maintenance on refrigeration equipment, and improving the layout of the cooling room. The implementation of these
recommendations can reduce waste, enhance production process efficiency, and ensure better and consistent product quality at PT. Sindabad.
