Abstract

Krimer nabati bubuk merupakan bahan tambahan pangan yang banyak digunakan dalam industri makanan dan minuman sebagai pengganti susu. Dalam desain ini, pabrik krimer nabati bubuk dirancang dengan memanfaatkan biji jagung sebagai bahan baku utama, mengingat ketersediaan jagung yang melimpah di Indonesia, khususnya di Kabupaten Tuban, Jawa Timur, yang menjadi produsen jagung terbesar di Indonesia. Lokasi pabrik dipilih dengan mempertimbangkan akses bahan baku, utilitas, tenaga kerja, transportasi, serta faktor lingkungan dan regulasi. Berdasarkan analisis yang dilakukan, Kabupaten Tuban merupakan lokasi yang paling optimal karena memiliki produksi jagung terbesar, akses transportasi yang baik, serta ketersediaan lahan dan tenaga kerja yang memadai. Proses produksi utama meliputi ekstraksi minyak jagung menggunakan metode solvent extraction, pemurnian minyak dengan refining fisik, pembuatan sirup glukosa, serta formulasi dan pengeringan krimer menggunakan spray drying untuk menghasilkan produk berbentuk bubuk. Dengan rancangan proses yang efisien dan pemilihan lokasi yang strategis, pabrik ini diharapkan mampu memenuhi kebutuhan krimer nabati bubuk yang terus meningkat di pasar domestik dan internasional. Didapatkan bahwa produksi pabrik krimer nabati bubuk dari biji jagung memiliki IRR dengan nilai 27,03% yang nilainya berada diatas nilai WACC yaitu sebesar 17,16%. Diperoleh juga nilai NPV yang positif sehingga pabrik dianggap layak untuk didirikan. Dari perhitungan yang telah dilakukan diperkirakan bahwa pabrik ini akan balik modal dalam waktu 5 tahun produksi.

Non-dairy creamer is a food additive, widely used in the food and beverage industry as a substitute for milk. In this design, a powdered non-dairy creamer factory is designed to have corn kernels as its main raw material, due to the availability of corn in Indonesia, especially in Tuban Regency, East Java, one of the largest corn producer area in Indonesia. The location of the factory is selected by considering access to raw materials, utilities, work force, transportation, and environmental and regulatory factors. Based on the analysis conducted, Tuban Regency is the most optimal location because it was the largest corn production country-wide, easy transportation access, and adequate area and work force availability. The main production process includes extraction of oil using the solvent extraction method, oil purification with physical refining, production of glucose syrup, and creamer formulation and drying using spray dryer. With efficient process design and strategic location selection, this factory is expected to be able to meet the increasing demand for powdered non-dairy creamer in the domestic and international market. From the results of the economic analysis that has been done, it was found that the production of the Non-Dairy Creamer Plant has an IRR with a value of 27,03% which is above the WACC value of 17,16%. A positive NPV value was also obtained so that the factory is considered feasible to be established. From the calculations that have been done, it is estimated that this factory will return its capital within 5 year of production.
