Abstract

Pola konsumsi natrium dan kalium yang tidak terkontrol dapat meningkatkan risiko gangguan kesehatan, terutama bagi penderita gagal ginjal. Kadar natrium yang tinggi dalam makanan dapat menyebabkan hipertensi, sementara kelebihan kalium berisiko memicu hiperkalemia dan gangguan jantung. Jamur tiram (Pleurotus spp.) merupakan sumber pangan yang kaya nutrisi, tetapi kandungan kalium dan natriumnya yang tinggi menjadikannya kurang sesuai bagi penderita gangguan ginjal. Penelitian ini bertujuan mengetahui pengaruh dari komposisi media tanam dan penambahan osmolit terhadap kadar kalium dan natrium, hasil panen, dan lama pertumbuhan miselium jamur tiram rendah kalium dan natrium. Produksi jamur dilakukan dengan metode baglog yang diawali dengan pembuatan media tanam yang terdiri atas kombinasi serbuk kayu sengon, dedak padi dan daun pisang kering yang di fermentasi, disterilisasi, kemudian diinokulsi bibit jamur tiram, diinkubasi di kumbung selama 35 hari. Hasil panen jamur kemudian dilakukan pengujian kandungan kalium dan natrium serta kandungan gizi. Penelitian ini diharapkan dapat menghasilkan jamur tiram dengan kandungan kalium dan natrium yang lebih rendah, sehingga lebih aman dikonsumsi oleh penderita gangguan ginjal tanpa mengurangi nilai gizinya.

Uncontrolled sodium and potassium consumption can increase the risk of health disorders, especially for individuals with kidney failure. High sodium levels in food can lead to hypertension, while excessive potassium intake may trigger hyperkalemia and cardiac arrhythmia. Oyster mushrooms (Pleurotus spp.) are a nutritious food source, but their high potassium and sodium content makes them less suitable for individuals with kidney disorders. This study aims to determine the effects of growing media composition and osmolyte supplementation on potassium and sodium levels, yield, and mycelium growth duration in low-potassium and low-sodium oyster mushrooms. Mushroom production is conducted using the baglog method, beginning with the preparation of the growing medium composed of a combination of Sengon wood sawdust, rice bran, and dried banana leaves. The substrate is fermented, sterilized, inoculated with oyster mushroom spawn, and incubated in a growing chamber for 35 days. After harvesting, the mushrooms undergo analysis for potassium and sodium content, as well as nutritional composition. This research is expected to produce oyster mushrooms with lower potassium and sodium levels, making them safer for consumption by individuals with kidney disorders while maintaining their nutritional value.
