Abstract

This study was conducted to determine the most appropriate agitation model to be applied to the food and beverage processing industry with particle which have good agitation and easy to clean from top cleaning device.
The performance of particle distribution is produced on the type of blades including Alva Laval Ensafoil®, Paddle and Trapezoid agitator. The results of the cleaning in place test using the riboflavin test method obtained the type of Paddle and Trapezoid blade as the easiest blade to clean. The Trapezoid blade has closest mixing performance as Alva Laval Ensafoil® (similar shape as hydro beam blade).
Computational fluid dynamics (CFD) showing the flow field on Trapezoid beam agitator exhibited improved flow uniformity and a higher power number compare with Alva Laval Ensafoil®.
The trapezoid agitator was tested at various impeller clearances (C) and diameters (D), with D/T = 0.47 and C/T ranging from 0.17 to 0.33. These configurations yielded suspension numbers (S) of 6.6 and 8.2, respectively. Minimum suspension speeds (Njs) can be calculated according to Zwietering’s formulation in combination with DSTC agitator calculation method.
