Abstract

Pesatnya perkembangan sektor ekonomi kreatif di Indonesia menyebabkan timbulnya atmosfir kompetitif yang ketat antar pemilik usaha pada sektor ini, terutama pada subsektor kuliner yang menjadi subsektor terbesar di sektor ekonomi kreatif. Salah satu pemain usaha dalam subsektor kuliner ekonomi kreatif adalah CV. X yang menyajikan produk donat sehat dengan nilai tambah komposisi madu dalam adonannya. Sejak berdiri pada tahun 2010, CV. X bergerak dengan visi untuk menjadi ikon donat Indonesia yang mendunia, yang mana berdampak pada arah gerak CV. X harus menjadi yang terbaik dalam persaingan usaha sejenis. Untuk menjadi yang terbaik harus memiliki proses bisnis yang se-efektif dan se-efisien mungkin, namun pada kenyataannya pada proses bisnis rantai pasok CV. X belum ada mekanisme manajemen risiko yang menyebabkan CV. X masih memiliki permasalahan dengan risiko yang perlu dimitigasi agar alur rantai pasok dapat berjalan dengan efektif dan efisien. Penelitian ini dilakukan untuk mengidentifikasi risiko yang ada pada rantai pasok CV. X serta hubungan keterkaitan antar risikonya, mengevaluasi kejadian dan penyebab risiko yang ada pada aktivitas rantai pasok CV. X serta menemukan prioritas penanganan risikonya, serta memberikan rekomendasi strategi aksi mitigasi risiko untuk proses bisnis CV. X. Model Supply Chain Operations Reference (SCOR) digunakan untuk mengidentifikasi proses bisnis rantai pasok CV. X dan ditemukan bahwa CV. X memiliki aktivitas pada seluruh major process/level 1 SCOR (plan, source, make, deliver, return, dan enable), pada level 2 terdapat 8 process categories, serta pada level 3 terdapat 25 process elements/aktivitas proses bisnis. Dari 25 aktivitas proses bisnis ditemukan 47 elemen kejadian risiko (risk event). Pada penelitian ini digunakan juga metode Interpretive Structural Modelling (ISM) untuk menilai hubungan keterkaitan antar elemen risiko guna menemukan risk event prioritas dari 47 risk event, yang mana menghasilkan 20 key risk event prioritas. Untuk menemukan prioritas penanganan risikonya digunakan metode House of Risk (HOR) Tahap 1 serta diagram pareto untuk melaksanakan pemeringkatannya. Dari hasil pengolahan ditemukan 9 penyebab risiko (risk agent) prioritas untuk ditangani lebih lanjut menggunakan HOR Tahap 2. Setelah pelaksanaan perhitungan HOR Tahap 2, dirumuskan sebanyak 16 preventive action yang dapat digunakan oleh CV. X untuk menjadi strategi aksi mitigasi risiko perusahaan.

The rapid development of the creative economy sector in Indonesia has created a tight competitive atmosphere among business owners in this sector, especially in the culinary sub-sector, which is the largest sub-sector in the creative economy sector. One of the business players in the culinary sub-sector of the creative economy is CV. X, which serves healthy donuts with added value in the composition of honey in the dough. Since its establishment in 2010, CV. X moves with the vision to become a global Indonesian donut icon, which has an impact on the direction of CV. X must be the best in similar business competition. To be the best one must have a business process that is as effective and efficient as possible, but in reality, there is no risk management mechanism in CV. X's supply chain business processes that causes CV. X still has problems with risks that need to be mitigated so that the supply chain flow can run effectively and efficiently. This study was conducted to identify the risks that exist in the CV. X’s supply chain and evaluate relationship between the risks, evaluate the incidence and causes of risks that exist in CV. X’s supply chain activities and also find priorities for risk management, as well as provide recommendations for risk mitigation action strategies for CV. X's business processes. The Supply Chain Operations Reference (SCOR) model is used to identify the supply chain business processes of CV. X and found that CV. X has 3 levels of supply chain activity, where in level 1 SCOR, CV. X has all supply chain activity spread through all major process (plan, source, make, deliver, return, and enable), at level 2 there are 8 process categories, and at level 3 there are 25 process elements/business process activities. From 25 business process activities, 47 elements of risk events were found. In this study, the Interpretive Structural Modeling (ISM) method was also used to assess the relationship between risk elements in order to find priority risk events from 47 risk events, which resulted in 20 priority key risk events. To find the priority of risk management, the House of Risk (HOR) Phase 1 method and Pareto diagrams are used to carry out the ranking. From the processing results, 9 priority risk agents were found to be handled further using HOR Phase 2. After the implementation of the HOR calculation Phase 2, 16 preventive actions were formulated that could be used by CV. X to become the company's risk mitigation action strategy.
