Abstract
Penelitian mengenai degradasi senyawa kurkumin dengan optimasi pengaruh pH dan variasi pelarut menggunakan metode spektrofotometri UV-Vis telah dilakukan. Stabilitas kurkumin cenderung lebih rendah pada pH netral dan basa. Kurkumin terdegradasi secara cepat pada suasana basa. Kurkumin memiliki panjang gelombang maksimum yang berbeda dalam pelarut yang berbeda. Perbedaan pelarut yang digunakan mempengaruhi stabilitas kurkumin. Kenaikan pH dapat menggeser spektra UV dari kurkumin. Spektra UV kurkumin mengalami pergeseran ke arah panjang gelombang yang lebih kecil dengan naiknya pH. Pergeseran spektra UV senyawa kurkumin disebabkan degradasi kurkumin akibat kenaikan pH. Selain itu dilakukan perhitungan dengan metode DFT untuk perhitungan keadaan dasar dan dilakukan perhitungan TDDFT untuk keadaan tereksitasi. Hasil perhitungan TDDFT menunjukkan spektra absorbsi kurkumin tidak memiliki perbedaan yang signifikan dengan spektra absorbsi kurkumin secara teori. Selain spektra absorbs kurkumin, dilakukan perhitungan spektra absorbsi produk degradasinya yang cukup bersesuaian dengan data eksperimen.

The study of curcumin degradation has been carried out by optimizing the effect of pH and solvents using the UV-Vis spectrophotometric method. The stability of curcumin decreased as pH increased. Curcumin was degraded rapidly in alkaline conditions. The curcumin has different maximum wavelengths in different solvents. The UV spectrum of curcumin was shifted as the pH increased. The UV spectra of curcumin shifted towards a smaller wavelength at alkaline pH. The shift in the UV spectra was due to curcumin degradation in alkaline pH. In addition, calculations were carried out using the DFT method for calculating the ground state and TDDFT calculations for the excited state. The absorption spectra calculated using the TDDFT method showed that the maximum wavelength of curcumin and its degradation products were in agreement with experimental and theoretical data.
