Abstract
Telah dilakukan penelitian cara menurunkan kandungan nitrit pada sarang burung walet (Collocalia vestita) menggunakan metode ekstraksi pelarut asam askorbat. Dalam penelitian ini dilakukan penentuan panjang gelombang maksimum, penentuan waktu reaksi, pembuatan kurva kalibrasi nitrit, metode ekstraksi sampel dan preparasi sampel. Metode ekstraksi pada sampel dilakukan pada enam variasi konsentrasi larutan asam askorbat yaitu 250, 500, 750, 1000, 1250 dan 1500 ppm. Ekstraksi dilakukan sebanyak tiga kali dengan rentang waktu selama 20 detik dengan putaran 400 rpm pada masing-masing ekstraksi. Volume larutan yang digunakan untuk setiap ekstraksi adalah 250 mL. Pengukuran kandungan nitrit pada sarang burung walet dilakukan dengan menggunakan spektrofotometer UV-Vis. Dari penelitian yang telah dilakukan pengukuran absorbansi dilakukan pada panjang gelombang maksimum 541 nm dengan waktu reaksi pada larutan selama 15 menit sebelum pengukuran. Pada pembuatan kurva kalibrasi nitrit diperoleh persamaan regresi y = 0,8886x + 0,0139 dengan nilai R2 sebesar 0,997. Hasil penelitian menunjukkan bahwa asam askorbat berpengaruh terhadap penurunan kandungan nitrit pada sarang burung walet. Persentase penurunan kandungan nitrit pada sarang burung walet dengan konsentrasi larutan asam askorbat 250, 500, 750, 1000, 1250, dan 1500 ppm berturut turut 25,12±0,18; 28,38±0,44; 40,70±0,30; 45,69±0,38; 48,75±0,54; dan 51,37±0,83%.

Research has been carried out on how to reduce the nitrite content in edible bird nest (Collocalia vestita) using an extraction method using ascorbic acid as a solvent. In this research, determination of maximum wavelength, determination of reaction time, making of nitrite calibration curve, sample extraction method and sample preparation were carried out. The extraction method on the sample was carried out at six variations of the concentration of ascorbic acid solution, namely 250, 500, 750, 1000, 1250 and 1500 ppm. Extraction was carried out three times with a time span of 20 seconds with a rotation of 400 rpm for each extraction. The volume of solution used for each extraction is 250 mL. Measurement of nitrite levels in edible bird nest was carried out using a UV-Vis spectrophotometer. From research that has been carried out absorbance measurements were carried out at a maximum wavelength of 541 nm with a reaction time of 15 minutes before the measurement. In making the nitrite calibration curve, the regression equation y = 0.8886x + 0.0139 is obtained with an R2 value of 0.997. The results showed that ascorbic acid influenced reducing nitrite levels in edible bird nest. The percentage decrease in nitrite levels in edible bird nest with ascorbic acid solution concentrations of 250, 500, 750, 1000, 1250, and 1500 ppm, respectively 25.12±0.18; 28.38±0.44; 40.70±0.30; 45.69±0.38; 48.75±0.54; and 51.37±0.83%.
