Abstract

Kopi merupakan salah satu komoditas pertanian yang banyak diminati oleh masyarakat Indonesia. Proses roasting merupakan tahapan penting dalam menentukan kualitas cita rasa kopi. Penelitian ini bertujuan untuk mengoptimalkan multirespon pada proses roasting kopi Robusta Silo di Libertee Roastery Probolinggo dengan menggunakan metode Taguchi Analysis dan Grey Relational Analysis (GRA). Variabel yang digunakan dalam penelitian ini meliputi suhu roasting, waktu roasting, dan kecepatan putaran drum. Respon yang diukur adalah kadar air, loss weight, dan warna. Hasil penelitian menunjukkan bahwa kombinasi level faktor yang optimal untuk multirespon proses roasting adalah suhu 210°C, waktu 12 menit, dan kecepatan putaran 40 rpm. Metode GRA-Taguchi terbukti efektif dalam menentukan parameter proses roasting yang optimal untuk meningkatkan kualitas kopi Robusta Silo secara bersamaan.

Coffee is one of the agricultural commodities that is in high demand by the people of Indonesia. The roasting process is an important stage in determining the quality of coffee flavor. This study aims to optimize the multi-response of the Robusta Silo coffee roasting process at Libertee Roastery Probolinggo using the Taguchi Analysis and Grey Relational Analysis (GRA) methods. The variables used in this study include roasting temperature, roasting time, and drum rotation speed. The responses measured were moisture content, loss weight, and color. The results showed that the optimal combination of factor levels for multi-response roasting processes was 210°C temperature, 12 minutes time, and 40 rpm rotation speed. The GRA-Taguchi method proved effective in determining the optimal roasting process parameters to improve the quality of Robusta Silo coffee simultaneously.
