Abstract

Cloud kitchen is a new delivery business model. Despite many advantages offered, there must be some risks in running the cloud kitchen business model. However, there is no research conducted to assess risks and design the appropriate mitigation strategies for eliminating the risks that may occur in cloud kitchens. Due to the absence of risk assessment research on cloud kitchens, the study identifies the risks of using cloud kitchens as a business model and provides a risk management analysis using the house of risk multistakeholder model. The type of cloud kitchen chosen is a cloud kitchen aggregator. The stakeholders mapping results indicate that five main stakeholders are involved in the supply chain risk assessment, and eight respondents are involved, including cloud kitchen management, cloud kitchen staff, merchant management, merchant staff, online food delivery application management, online food delivery application driver, customer, and supplier. Based on risk identification results, 34 risk events and 36 risk agents might occur within the supply chain, with 16 risk agents of priority risk. The selected risks were analyzed and produced 31 preventive actions, which are the responsibility of each stakeholder, with 12 priority preventive actions whose influence on the supply chain reaches 80.24%.

Cloud kitchen adalah model bisnis pengiriman makanan yang baru. Meskipun memiliki banyak keuntungan, pasti ada beberapa risiko dalam menjalankan model bisnis cloud kitchen. Namun, belum ada penelitian yang dilakukan untuk menilai risiko dan merancang strategi mitigasi yang tepat untuk menangani risiko yang mungkin terjadi di cloud kitchen. Penelitian ini akan mengidentifikasi risiko penggunaan cloud kitchen sebagai model bisnis dan memberikan analisis manajemen risiko menggunakan metode house of risk multistakeholder. Jenis cloud kitchen yang dipilih adalah cloud kitchen agregator. Hasil pemetaan stakeholder menunjukkan bahwa ada lima stakeholders utama dan delapan responden yang terlibat dalam penilaian risiko, antara lain manajemen cloud kitchen, staf cloud kitchen, manajemen merchant, staf merchant, manajemen aplikasi pengiriman makanan online, pengemudi aplikasi pengiriman makanan online, pelanggan, dan pemasok. Berdasarkan hasil identifikasi risiko, 34 kejadian risiko dan 36 penyebab risiko mungkin terjadi, dengan prioritas 16 penyebab risiko. Risiko yang dipilih dianalisis dan menghasilkan 31 tindakan pencegahan yang menjadi tanggung jawab masing-masing stakeholder dengan prioritas 12 tindakan pencegahan yang pengaruhnya terhadap rantai pasok cloud kitchen mencapai 80,24%.
