Abstract
Sorbitol merupakan senyawa poliol yang memiliki tingkat kemanisan sekitar 0,6 kali sukrosa dan nilai kalori rendah sebesar 2,6 kalori/gram, sehingga aman dikonsumsi oleh penderita diabetes dan banyak dimanfaatkan sebagai pemanis alternatif. Sorbitol digunakan secara luas dalam industri pangan, farmasi, kosmetik, serta industri kimia lainnya. Seiring meningkatnya kesadaran masyarakat terhadap kesehatan serta pertumbuhan penduduk dan ekonomi nasional, kebutuhan sorbitol di Indonesia diperkirakan terus mengalami peningkatan. Oleh karena itu, direncanakan pendirian pabrik sorbitol berbahan baku pati jagung dengan kapasitas produksi sebesar 25.000 ton per tahun. Proses pembuatan sorbitol dilakukan melalui dua tahap utama. Tahap pertama adalah konversi pati jagung menjadi glukosa melalui proses hidrolisis enzimatik menggunakan enzim α-amilase dan glukoamilase. Tahap kedua adalah proses hidrogenasi katalitik glukosa menjadi sorbitol. Pabrik direncanakan beroperasi secara kontinyu selama 24 jam per hari dengan waktu operasi 330 hari per tahun. Lokasi pabrik dipilih di Kota Tuban, Provinsi Jawa Timur, dengan pertimbangan ketersediaan bahan baku, lahan, biaya tenaga kerja, serta akses transportasi dan pelabuhan yang mendukung distribusi produk. Hasil analisis ekonomi menunjukkan nilai Internal Rate of Return (IRR) sebesar 23,77% dengan waktu pengembalian modal selama 5,5 tahun, lebih kecil dari umur pinjaman, sehingga pabrik sorbitol ini layak untuk didirikan secara teknis dan ekonomis.

Sorbitol is a polyol compound that has a sweetness level of about 0.6 times that of sucrose and a low calorie value of 2.6 calories/gram, making it safe for consumption by diabetics and widely used as an alternative sweetener. Sorbitol is widely used in the food, pharmaceutical, cosmetics, and other chemical industries. As public awareness of health increases and the population and national economy grow, the demand for sorbitol in Indonesia is expected to continue to increase. Therefore, there are plans to establish a corn starch-based sorbitol factory with a production capacity of 25,000 tons per year. The sorbitol manufacturing process involves two main stages. The first stage is the conversion of corn starch into glucose through enzymatic hydrolysis using α-amylase and glucoamylase enzymes. The second stage is the catalytic hydrogenation of glucose into sorbitol. The factory is planned to operate continuously for 24 hours per day with an operating time of 330 days per year. The location of the factory was chosen in Tuban City, East Java Province, considering the availability of raw materials, land, labor costs, and access to transportation and ports that support product distribution. The economic analysis shows an Internal Rate of Return (IRR) of 23.77% with a payback period of 5.5 years, which is shorter than the loan term, making this sorbitol plant technically and economically feasible to establish.
