Abstract

Penelitian ini bertujuan untuk membuat dan karakterisasi film komposit antosianin/nanoselulosa dari kubis merah (Brassica oleraccea var. capitata) sebagai indikator warna. Antosianin sebagai senyawa aktif indikator warna diekstraksi melalui metode maserasi dengan pelarut etanol. Fabrikasi dilakukan dengan menginkorporasikan antosianin ke dalam matriks nanoselulosa melalui metode gelatinisasi dengan variasi volume antosianin 5 mL (RC5), 10 mL (RC10), dan 15 mL (RC15). Film komposit dikarakterisasi dengan Scanning Electron Microscope (SEM), spektrofotometer UV-Vis, dan FTIR-ATR, serta dievaluasi sifat fisiknya meliputi ketebalan, kadar air, dan kelarutan dalam air. Film komposit kemudian diuji respons warna terhadap perubahan pH dan paparan gas amonia. Konsentrasi antosianin total diperoleh sebesar 45,287±0,918 mg per 100 g berat segar kubis merah. Hasil analisis SEM menunjukkan bahwa peningkatan volume antosianin menghasilkan permukaan film yang semakin halus dan diikuti dengan peningkatan ketebalan film komposit. Kadar air film berada pada kisaran 61,357-61,628% dan kelarutan dalam air menurun setelah penambahan antosianin dari RC0 sebagai kontrol dengan nilai 17,963% menjadi 14,335-15,827&. Karakterisasi UV-Vis menunjukkan adanya pergeseran puncak serapan pada rentang 510-610 nm karena transformasi struktur antosianin pada pH 2-12. Pengujian terhadap paparan gas amonia memperlihatkan bahwa film RC15 memberikan respons kromatik paling jelas secara visual yang ditunjukkan oleh nilai ∆E tertinggi. Hasil penelitian menunjukkan bahwa nanoselulosa mampu berfungsi sebagai matriks pembentuk film yang efektif untuk menginkorporasikan antosianin tanpa menghambat sensitivitasnya terhadap perubahan kondisi lingkungan sehingga dapat diaplikasikan sebagai indikator warna.

This study aims to synthesis and characterize an anthocyanin/nanocellulose composite film from red cabbage (Brassica oleraccea var. capitata) as a color indicator. Anthocyanin as the active compound for color indicator was extracted through the maceration method with ethanol solvent. Fabrication was carried out by incorporating anthocyanin into a nanocellulose matrix through gelatinization method with varying anthocyanin volume of 5 mL (RC5), 10 mL (RC10), and 15 mL (RC15). The composite film characterized by Scanning Electron Microscope (SEM), UV-Vis spectrophotometer, FTIR-ATR, and its physical properties were evaluated such as thickness, water content, and solubility. The composite films were then tested for color response to pH changes and exposure to ammonia gas. The total anthocyanin concentration obtained was 45.287 ±0.918 mg per 100 g red cabbage fresh weight. SEM analysis results showed that the increasing anthocyanin volume resulted in a smoother film surface and was followed by an increase in the thickness of the composite film. The water content in the film was in the range of 61.357-61.628% and the water solubility decreased after the addition of anthocyanin from the RC0 as a control valued 17.963% to 14.335-15.827%. UV-Vis characterization showed a shift in the absorption peak in the range of 510-610 nm due to the transformation in the anthocyanin structure at pH 2-12. Testing on ammonia gas exposure showed that the RC15 film provided the most visually clear chromatic response indicated by the highest ∆E value. These results indicate that nanocellulose is able to function as an effective film-forming matrix to incorporate anthocyanin without inhibiting their sensitivity to changes in environmental conditions, so that it can be applied as a color indicator.
