Abstract

In this study, the influence of Saccharomyces cerevisiae immobilization using agarose towards the pattern of substrate consumption and the production of ethanol during fermentation has been investigated. The results showed that the amount of immobilized cell not depend on agarose concentration. 3% of agarose used to immobilize produce the highest ethanol (4,16%). After 31 hours fermentation (optimum time) with 4,8 × 10⁹ cells, the ethanol yield of immobilized cell 30% more than free cell (0,52 mL/g glucose and 0,36 mL/g glucose, respectively). The ethanol concentration produced by immobilized cell decreased 5,1% after 4 times used and it also decreased 7,6% after 10 days storaged without nutrition.
