Abstract

With the sea area reaching 3.54 million km2, it is a very large land that can be used by fishermen to become livelihoods. With this sea area, Indonesia is very rich in marine wealth, fish. However, the problem arises when fishermen are unable to reach the farther point of the sea due to inadequate cooling systems of fish catches. The use of ice blocks which currently the majority of fishermen use as fishing catches coolers, makes fishermen discourage their intention to go further to sea due to concerns that the existing fish caught will not last long. Today, ice slurry is very popular because of its better performance than ice blocks to maintain fish quality. This ice slurry maintains that there is no air between fish and ice, so that cooling will be faster because the surface area of the box is larger and the growth of bacteria becomes slower which makes the time to decay process slower. With this ice slurry, the cooling time of fish is three times faster than ice blocks. The best cooling time is certainly very desirable for fishermen in terms of their level of effectiveness. However, the good cooling time also depends on what compounds make up the ice slurry. Each ice slurry forming compound has advantages and disadvantages of each which must be studied more deeply. In this test, the result of a temperature increase in ice slurry mixed with ice slurry with sodium chloride and potassium chloride compounds is better than ice cubes. There is an obstacle in using this compound with ice slurry, namely, the data quoted from the MSDS concludes that the use of harmful sodium chloride and potassium chloride compounds can cause some effects on the body when consumed.
