Abstract
Tujuan penelitian ini adalah Mengetahui pengaruh lama
waktu perendaman dan perbedaan metode hidrolisis terhadap
karakteristik fisik dan kimia dari gelatin sisik ikan kakap
(Lutjanus sp.) Membandingkan hasil yang diperoleh dengan SNI
dan GMIA gelatin yang meliputi kadar air, kadar abu, rendemen,
pH, viskositas dan organoleptik.
Pada tahap pembuatan produk, yakni proses degresing,
yaitu proses penghilangan lemak dengan cara merendam sisik
ikan kakap ke dalam air mendidih pda suhu 100 oC selama 30
menit. Kemudian dilanjutkan tahap kedua yaitu demineralisasi
dengan cara merendam dalam larutan HCl 5% selama 1 hari, 3
hari, 5 hari. Kemudian memisahkan ossein dengan larutan HCl 5
% dengan cara disaring. Setelah itu ossein di rendam dalam air
bersuhu 80 oC selama 4 jam, sambil diaduk dengan kecepatan
300 rpm. Dalam pemanasan ini terbentuk larutan gelatin. dalam
oven selama pada suhu 50 oC selama 24 jam. viskositas dilakukan
Dari hasil percobaan yang kami lakukan diperoleh hasil
yg paling optimal pada konsentrasi HCl 5% dengan lama
perendaman 5 hari menghasilkan rendemen, pH, kadar air,
viskositas, dan kadar abu sebesar 0,241%;6,46;0,241%;3,49
cp;dan 1,656%.

The purpose of this researche is to know influence of long
time hydrolysis and difference hydrolysis method to physic and
chemistry caracteristic from sneppel fish (Lutjanus sp.) gelatin.
To compare the result with SNI and GMIA such as humidity,
yield, ash, ph, organoleptic and viscosity.
Degreassing process is done by to wash scales of fish
with pour thwe scales of fish ,is fat removal processing with to
immerse fish scales in boiling water at temperature 100 degrees
celcius during 30 minutes. And then, it is continued to second step
that demineralization with to immerse in HCL solvent 5% during
1 day, 3 days, and 5 days. The scales of fish that is immersed in
HCL solvent 5% will result ossein. Then, to separate ossein with
HCL solvent 5% is filtering. After that, wash the ossein with
water. Then the ossein is immersed to water at temperature 80
degrees celcius during 4 hours, while is stirred with speed 300
rpm.. Then the gelatine which have shape sold (gel) is dried in
oven at temperature 50 degrees celcius during 24 hours.
From the result of this research is getting optimal result
at concentration HCl 5% with long time hydrolysis 5 days to
result yield 0,241%,, pH 6,46, humidity 0,241%, viscosity 3,49 cp,
and ash1,656%.
