Abstract

As a tropical country, Indonesia produces many kinds of horticultural products, especially fruits. Apart from local marketing, the fruit produced by Indonesian farmers is also able to compete with foreign markets. In this case, a means of transportation is needed in the shipping process, one of which is a fruit transport vessel. So, we need a special storage area that can maintain the quality of the fruit. To maintain the quality of the fruit during the shipping process, there is a storage system called Controlled Atmosphere Storage (CAS), where this system tries to maintain the quality of the fruit by controlling temperature and air conditions continuously according to the desired concentration. The objective of the research to be carried out is to know the effect of temperature and atmospheric modification in a ship's cargo hold to the shelf life of fruit. In this research, several experiments were carried out using CAS prototypes to answer the research objectives. This prototype uses dry ice as a coolant, CaOH2 as a CO2 scrubber, a mixture of KMnO4 & zeolite as an ethylene scrubber, and N2 gas as an O2 scrubber. Experiments were carried out using 2 variations of fruit and 3 variations in the amount of dry ice, with fruit variations namely banana and pineapple, while variations in the amount of dry ice were 7 kg, 9 kg, and 11 kg. Based on the results of 6 experiments that have been done, it can be said that the temperature can affect the ripening process of fruit. This is because the decrease in temperature can reduce the levels of ethylene produced by fruit. Besides the temperature, the O2 and CO2 levels can also affect the fruit ripening process. This is because the increase in CO2 levels around the fruit will lower O2 levels, which causes inhibition of the respiration process in the fruit.
