Abstract

Minyak goreng adalah bahan pangan dengan komposisi utama trigliserida berasal dari bahan nabati. Pengolahan pangan dengan minyak goreng mampu berfungsi sebagai penghantar panas, pemberi cita rasa, perbaikan tekstur makanan dan penambah nilai gizi. Namun, harga minyak goreng mengalami perubahan yang cukup signifikan pada tahun 2022. Permasalahan tersebut akan dilakukan pemodelan dan peramalan harga minyak goreng yang dipengaruhi oleh produksi minyak sawit di Indonesia dengan pendekatan fungsi transfer. Fungsi transfer merupakan suatu metode peramalan time series yang menggunakan dua variabel yang terdiri dari deret berkala output (Yt) dan deret berkala input (Xt). Hasil analisis menunjukkan bahwa model ARIMA yang terbaik dari deret intput yaitu model ARIMA (1,0,0) dengan nilai MAPE sebesar 8.192% dan nilai RMSE sebesar 408.628. Model fungsi transfer yang terbaik untuk meramalkan harga minyak goreng yaitu model fungsi transfer dengan orde b,r,s (0,0,0) dengan deret noise ARIMA (1,0,0). Dari model yang di dapatkan menunjukan bahwa harga minyak goreng bulan ke-t dipengaruhi oleh harga minyak goreng satu bulan sebelumnya dan dipengaruhi oleh produksi minyak sawit satu bulan serta dua bulan sebelumnya. Hasil ramalan harga minyak goreng dengan nilai MAPE sebesar 20.232% yang artinya persentase kesalahan nilai ramalan harga minyak goreng sebesar 20.232% dan 79.768% menunjukkan hasil ramalan harga minyak goreng pada Juni 2022 hingga Desember 2022 yang tidak berbeda jauh dengan data aktual dari harga minyak goreng. RMSE sebesar 3913.535 yang menunjukkan tingkat kesalahan hasil estimasi peramalan sebesar 3913.535. Hasil ramalan harga minyak goreng menunjukkan pada Juni 2022 hingga Desember 2023 menunjukan penurunan nilai ramalan dari harga minyak goreng

Cooking oil is a food ingredient with the main composition of triglycerides derived from vegetable ingredients. Food processing with cooking oil is able to function as a conductor of heat, giving flavor, improving food texture and adding nutritional value. However, the price of cooking oil will experience a significant change in 2022. This problem will be modeled and forecasted for cooking oil prices which are affected by palm oil production in Indonesia using a transfer function approach. The transfer function is a time series forecasting method that uses two variables consisting of an output time series (Yt) and an input time series (Xt). The results of the analysis show that the best ARIMA model from the input series is the ARIMA model (1,0,0) with a MAPE value of 8,192% and an RMSE value of 408,628. The best transfer function model for predicting cooking oil prices is a transfer function model of order b,r,s (0,0,0) with ARIMA noise series (1,0,0). From the model obtained, it shows that the price of cooking oil in month t is influenced by the price of cooking oil in the previous month and is influenced by the production of palm oil in the previous month and two
months. The results of the cooking oil price forecast with a MAPE value of 20,232%, which means that the percentage error in the cooking oil price forecast is 20,232% and 79,768% shows the results of the cooking oil price forecast from June 2022 to December 2022 which are not much different from
the actual data from the price of cooking oil. The RMSE is 3913,535 which indicates the error rate of the estimated forecasting results is 3913,535. The results of the cooking oil price forecast show that from June 2022 to December 2023 it will show a decrease in the forecast value of the cooking oil price
