Abstract

Monosodium Glutamat (MSG) merupakan salah satu jenis bahan tambahan pangan yang populer di industri pangan dan masyarakat saat ini. Dengan penambahan MSG, makanan dapat diperkaya dengan rasa manis dan gurih. Proses pembuatan MSG melibatkan empat tahapan, dan salah satunya adalah tahapan isolasi yang menghadapi kendala pada sistem pendingin unit kristalisasi menggunakan spiral coil yang tidak mencapai suhu yang diinginkan. Untuk mengatasi masalah tersebut, solusi yang ditemukan adalah penggunaan Plate and Frame Heat Exchanger yang menghasilkan efisiensi energi yang lebih tinggi (99%) dibandingkan dengan penggunaan spiral coil (71%). Dampaknya, konsumsi energi dalam proses unit isolasi asam glutamat mengalami penghematan sebesar 47.251.077,61 kJ per tahun. Dalam analisis ekonomi, terjadi penghematan biaya sebesar Rp 19.815.140.694 dan peningkatan keuntungan sebesar Rp 19.845.146.593, dengan rincian pendapatan bersih kondisi eksisting sebesar Rp Rp783.374.644.976 menjadi sebesar Rp 803.219.791.569 setelah penerapan sistem baru (modifikasi).

Monosodium Glutamate (MSG) is a food additive popular in the food industry and society today. With the addition of MSG, food can be enriched with sweet and savory flavors. The process of making MSG involves four stages, and one of them is the isolation stage which faces problems in the cooling system of the crystallization unit using a spiral coil that does not reach the desired temperature. To overcome this problem, the solution found is using a Plate and Frame Heat Exchanger which produces a higher energy efficiency (99%) compared to a spiral coil (71%). As a result, energy consumption in the glutamic acid isolation unit process has saved 47,251,077.61 kJ per year. In the economic analysis, there was a cost savings of IDR 19,815,140,694 and an increase in profit of IDR 19,845,146,593, with details of net income from existing conditions of IDR 783,374,644,976 to IDR 803,219,791,569 after implementing the new system (modification).
