Abstract
Perkembangan teknologi digital mendorong pelaku usaha untuk mengoptimalkan efisiensi operasional, promosi, dan pengalaman pelanggan melalui layanan berbasis aplikasi. Coffee shop di Kota Jember masih menghadapi berbagai kendala, seperti kendala efisiensi operasional, keterbatasan promosi, loyalitas pelanggan, belum tersedianya sistem reservasi terintegrasi, serta minimnya personalisasi layanan bagi pengunjung. Penelitian ini bertujuan merancang model bisnis dan prototype aplikasi digital yang dapat menjawab kebutuhan pengelola dan pengunjung coffee shop dengan menerapkan penyusunan Lean Canvas , pendekatan Lean Startup melalui tahapan Build, Measure, dan Learn serta perancangan layanan service design menggunakan kerangka Double Diamond melalui tahapan Define, Develop, dan Deliver. Hasil eksplorasi menunjukkan kebutuhan utama pengelola meliputi pencatatan transaksi, manajemen stok, promosi, loyalitas pelanggan, reservasi, laporan keuangan, dan analisis performa usaha. Sementara itu, pengunjung membutuhkan katalog coffee shop, informasi promo, rekomendasi, reward, kemudahan reservasi, serta fitur feedback yang lebih interaktif. Prototype diuji menggunakan System Usability Scale (SUS) terhadap dua kelompok pengguna. Hasil menunjukkan skor 89 untuk pengunjung dan 88 untuk pengelola, yang termasuk kategori A+ (Excellent), Acceptable, dan Promoter. Hal ini menunjukkan bahwa prototype mudah digunakan dan berpotensi tinggi untuk direkomendasikan. Penelitian ini menghasilkan 9 fitur prioritas untuk pengunjung coffee shop, 9 fitur prioritas untuk pengelola coffee shop dan model bisnis startup yang selaras dengan kebutuhan pengguna, sehingga memiliki potensi untuk mendukung digitalisasi ekosistem coffee shop lokal di Kota Jember.

The development of digital technology encourages business actors to optimize operational efficiency, promotion, and customer experience through application-based services. Coffee shops in Jember City still face various challenges, including operational inefficiency, limited promotional reach, low customer loyalty, the absence of an integrated reservation system, and minimal service personalization for customers. This study aims to design a business model and a digital application prototype that address the needs of both coffee shop managers and customers by applying Lean Canvas formulation, the Lean Startup approach, specifically the Build, Measure, and Learn, as well as service design through the Double Diamond framework, specifically the Define, Develop, and Deliver stages. The exploration results indicate that the primary needs of coffee shop managers include transaction recording, inventory management, promotion, customer loyalty programs, reservations, financial reporting, and business performance analysis. Meanwhile, customers require access to a coffee shop catalog, promotional information, personalized recommendations, rewards, convenient reservation features, and more interactive feedback mechanisms. The prototype was evaluated using the System Usability Scale (SUS) involving two user groups. The results show a score of 89 for customers and 88 for managers, both of which fall into the A+ (Excellent), Acceptable, and Promoter categories. These results indicate that the prototype is easy to use and has a high potential to be recommended. This research produces nine priority features for coffee shop customers, nine priority features for coffee shop managers, and a startup business model aligned with user needs, demonstrating strong potential to support the digitalization of the local coffee shop ecosystem in Jember City.
