Abstract
Post Pasteurization Contamination (PPC) merupakan kondisi adanya kontaminasi mikroorganisme, khususnya coliform dan biofilm pada alat pasteurisasi susu akibat tidak adanya proses pembilasan. Salah satu cara untuk meminimalisir kontaminasi pasca pasteurisasi yaitu dengan menerapkan proses pembilasan. Pada proyek akhir ini berhasil dibuat prototipe plant pasteurisasi susu yang terintegrasi dengan proses pembilasan dengan memanfaatkan kecepatan aliran. Metode pembilasan diterapkan menggunakan Clean In Place (CIP) dengan memanfaatkan kecepatan aliran, di mana standar minimum kecepatan aliran yang digunakan adalah 1,5 m/s atau setara dengan 27,18 L/menit. Proses Clean In Place dilaksanakan secara otomatis dengan memanfaatkan sinyal feedback yang diperoleh dari pembacaan sensor pH, TDS, dan turbidity. Karakteristik flow sensor yang digunakan menunjukkan bahwa flow sensor 1 memiliki nilai error sebesar 1,096533646% dengan tingkat akurasi 98,90347%, sedangkan flow sensor 2 menunjukkan nilai error sebesar 2,587061873% dengan tingkat akurasi 97,41293813%. Pada pengujian plant selama proses Clean In Place, nilai laju aliran yang terbaca oleh flow sensor berada pada rentang 35 L/menit hingga 45 L/menit. Penerapan proses flushing menggunakan metode Clean In Place (CIP) dinyatakan tidak memberikan pengaruh terhadap tingkat cemaran bakteri coliform. Hal ini ditunjukkan oleh hasil pengujian yang menyatakan bahwa sebelum penerapan proses flushing Clean In Place, cemaran coliform terukur sebesar 0 koloni, dan setelah penerapan proses Clean In Place, cemaran coliform tetap terdeteksi sebesar 0 koloni. Berdasarkan hasil tersebut, dapat dinyatakan bahwa proses flushing menggunakan metode Clean In Place berhasil diterapkan tanpa memengaruhi kinerja alat pasteurisasi susu.

Post Pasteurization Contamination (PPC) is a condition where microorganisms, particularly coliforms and biofilms, contaminate milk pasteurization equipment due to the absence of a rinsing process. One way to minimize post-pasteurization contamination is to implement a rinsing process. In this final project, a prototype milk pasteurization plant integrated with a rinsing process utilizing flow velocity was successfully developed. The rinsing method was implemented using Clean In Place (CIP) utilizing flow velocity, where the minimum flow velocity standard used was 1.5 m/s or equivalent to 27.18 L/minute. The Clean In Place process is carried out automatically by utilizing feedback signals obtained from pH, TDS, and turbidity sensor readings. The characteristics of the flow sensors used show that flow sensor 1 has an error value of 1.096533646% with an accuracy level of 98.90347%, while flow sensor 2 shows an error value of 2.587061873% with an accuracy level of 97.41293813%. During plant testing during the Clean In Place process, the flow rate read by the flow sensor was in the range of 35 L/minute to 45 L/minute. The application of the flushing process using the Clean In Place (CIP) method was found to have no effect on the level of coliform bacteria contamination. This was demonstrated by test results showing that before the Clean In Place flushing process was applied, coliform contamination was measured at 0 colonies, and after the Clean In Place process was applied, coliform contamination remained undetectable at 0 colonies. Based on these results, it can be stated that the flushing process using the Clean In Place method was successfully implemented without affecting the performance of the milk pasteurization equipment.
