Abstract

Pondok Tempo Doeloe Juanda merupakan restoran spesialis masakan khas Indonesia dengan cita rasa khas Jawa Timur yang berada di bawah naungan IBC Group. Lokasi restoran ini strategis, hanya berjarak 3,3km dari Bandara Juanda, sehingga restoran ini memiliki banyak kompetitor dengan pangsa pasar yang sama. Hal ini menuntut Pondok Tempo Doeloe Juanda untuk meningkatkan daya saing, salah satunya dengan mengaplikasikan desain interior yang baik dan lebih berkarakter sebagai pembeda dengan restoran kompetitor lainnya. Sesuai dengan namanya, Pondok Tempo Doeloe Juanda mendekorasi interior restoran dengan pajangan foto-foto kuno hitam putih dan lampu gantung antik, serta memutar lagu-lagu keroncong melalui wall speaker pada dining area. Namun, nuansa yang ingin disajikan ini belum ditampilkan secara optimal melalui aspek interior, sehingga terkadang masih dipertanyakan oleh para customer restoran tersebut. Maka dari itu, Pondok Tempo Doeloe Juanda membutuhkan redesain interior. Metode pengumpulan data yang digunakan pada penelitian ini adalah wawancara dengan manager restoran sebagai narasumber, observasi lapangan, dan kuisioner yang disebarkan secara langsung dan online kepada 46 pengunjung Pondok Tempo Doeloe Juanda dengan kategori profesi yang berbeda-beda. Data-data yang didapatkan kemudian dianalisis dengan berdasarkan pada tinjauan dari berbagai pustaka dan studi pembanding. Menurut analisis hasil penelitian yang telah dilakukan oleh penulis, langgam Kolonial Jengki di Jawa Timur cocok untuk diterapkan pada perancangan redesain interior Pondok Tempo Doeloe Juanda. Langgam ini dapat diaplikasikan pada lantai melalui penggunaan ubin tegel, pada dinding dengan mengaplikasikan dual-toned wall, pada plafon dengan penggunaan plafon kayu dan drop ceiling, pada furnitur melalui penggunaan material kayu dan anyaman bambu serta bentukan vertikal bersudut, pada elemen estetis dengan menggunakan kombinasi material stained glass, dan dapat juga diaplikasikan melalui penggunaan pajangan antik dan kuno yang diharapkan akan dapat memunculkan nuansa nostalgia. Redesain interior ini diharapkan dapat menunjukkan ciri khas Pondok Tempo Doeloe Juanda melalui aspek-aspek interior, agar dapat membantu menaikkan tingkat customer retention dengan memberikan customer experience yang berkesan dan memuaskan, sehingga akan membuka peluang lebih besar untuk datangnya repeat customer maupun pelanggan baru.

Pondok Tempo Doeloe is a restaurant which specialising in serving Indonesian quisine from all across the Java Island with a unique tinge of East Javanese taste and is owned by IBC Group. The restaurant is located in Juanda Waru Highway, Sidoarjo and can easily be reached from Juanda International Airport with approximately only 3.3km distance. This desireable location provides great marketing opportunities for commercial businesses such as restaurant, hence the many competitors aiming for the same target market. This competitive market field urges Pondok Tempo Doeloe to display a certain distictive character visually in order to appeal more to the customers, and one of it can be achieved through interior design. To live up to its name—whose literal translation is an ‘old hut’—the restaurant is decorated with a series of old photos collection hung on the wall, antique pendant lamps hanging on the ceiling, and kroncong music played to accompany the dining time. This atmosphere, unfortunately, hasn’t been delivered quite well through the interior aspects and still is questioned by some of the restaurant’s customers, and thus why Pondok Tempo Doeloe Juanda needs an interior redesign. All primary datas were collected by using three methods—interview, field observation, and questionnaire.The questionnaire was given to 46 Pondok Tempo Doeloe Juanda’s customers and the responses were collected through both offline and online form.The collected primary datas were then to be analysed based on the secondary datas collected from the literature review and comparative study. According to this research, a combination of Yankee and Colonialism style was concluded to be most suitable for the interior redesign of Pondok Tempo Doeloe Juanda. The style itself could be applied to the interior elements through the usage of a retro cement tiles called tegel as the floor finish, dual-toned wall with wall paint finish, lumber ceiling and wooden drop ceiling, the angled vertical form and the usage of rattan and dark furnished woods for the furniture, a combination of stained glass for the room divider, and through some antique or retro collectible decors in order to create the desired twentieth-century nostalgia effect. This interior redesign can hopefully convey the distinctive Pondok Tempo Doeloe’s character through its interior aspects, and therefore will be able to boost their customer retention level by offering an impressive and satisfying customer experience, thus increasing the amount of new and repeat customers.
